Chocolate, as you all must know by now is my secret weapon. And today I am going to take you to a delightful little brookie that has loads of chocolate in it, just for you.

Hi there! I am so sorry for having been absent for so long. As I had mentioned in my emails, I was away on a vacation and although I have been back for five days now, I finally found the time to talk to you guys now. But I know you have been following me on Instagram and seeing everything that i have been putting up, havent you? There is no excuse for not sharing the recipes as soon as I post the pics except that I really aren’t getting enough time. Please accept my apologies if I have kept you waiting and lets just forget this break, shall we?

So how have you been? As much as one enjoys the vacation, I always dread coming back home to mountains of laundry, unending chores, two days of intense cleaning (sorry, I have borderline OCD and I clean and clean things) and sorting through about 1000 work emails. Ugh. So not what you want to end up doing after having a great time away. But you know what? I will come up and confess this away anyhow, it might sound weird to some, but I am sure I will find many who will nod along with me and say yes, me too.

I miss home. When I am away. I get homesick if I am away from my own little cosy cocoon for more than 3 days. Is it weird or does that happen to you too? It does right? Yay!! So one night after I got back, I was glued to the Tv watching Masterchef Au as usual when something caught my attention and I had this urgent need to make it. It was like a twitch that wouldn’t stop until I tried my hands at it. So finally, after doing a little research I took out my apron, decided to get off the couch and get back to my little cucina again. Vacation was over. But the fun was just beginning for me!

You guessed it right. I am talking about Harry’s famous Brookies that he baked for Nigella Lawson. Did you watch that episode? How good were those!! Prompted by the fact that my sister wanted me to bring those when I went visiting (soon), I knew I had to give the recipe a try. I have made this in two batches. The first was a little too crispy and not chewy enough. I decided to work on it a little more and the second time round, brookies were perfect. Chewy, intensely chocolatey, crackled top – just like they were supposed to be. Since I was using rich Lindt chocolate for the brookies, I decided to give these a little additional something to bring out the true taste of chocolate more. So, some sea salt flakes went into the batter along with loads of chocolate chips. The result was positively droolworthy!

These are perfect treats for kids, pack them in lunch boxes as a side treat or hand them over to the kids after they come back from playing. Perfect for you when you want to snack and need something sweet quickly and only chocolate will do. And if you have a serious case of midnight munchies like me,chances are you will never be able to resist these for long. Result:  batch of 15 gets over pretty quickly!

I sandwiched two of these cookies with some vanilla bean ice cream for breakfast the other day and oh my gosh you guys, it was so so incredible. For a change from my usual Overnight Oats with bruleed mango and cherry, these brookies were so so indulgent. I felt naughty! Well, almost. Coz then I forgot everything and busied myself in making the 2nd sandwich.  We had 2 sandwiches each and P even wanted a 3rd one! Later that day, I smeared some good old Nutella on one half of the cookie and added some jelly bins and served it to babyD and her friends. Now, I am officially their favorite. Which means these are also great if you want to win over some adorable tiny adults.

No matter why you bake it, the point is you will love it. These have hardly any butter in them, a piddly 10gms!! Seriously? Isn’t that just awesome. Ingredients
  • 70% Dark chocolate - 70 gms
  • Butter - 10 gms
  • Granulated sugar - 45gms
  • Cornflour - 16 gms
  • Choco chip - 20 gms
  • Egg- 1
  • Baking powder ½ tsp
  • Vanilla essence ½ tsp
  • Sea salt flakes ¼ tsp
Instructions
  1. Preheat oven to 180C.
  2. Start by melting the chocolate and butter over a baine marie. Essentially, place the chocolate and butter in a bowl set over a saucepan of simmering water. Slowly the chocolate should start melting. Stir to mix well. Remove from heat and set aside to cool until needed.
  3. In another mixing bowl, combine all the remaining ingredients. beat until light and fluffy.
  4. Now add the cooled chocolate butter mixture and mix until well combined.
  5. Preheat oven to 180C.
  6. Use a teaspoon scoop to spoon the dough on baking trays lined with baking paper.
  7. Top with the chocolate chips and lightly press them into the dough.
  8. Bake for 12-13 minutes in the preheated oven. Remove from oven and set aside to cool.
  9. To make sandwiches:
  10. Once the cookie is cooled, spread some vanilla bean icecream on one and press another cookie on top to make a sandwich. Serve immediately.
  11. Or, smear the cookie with Nutella and top with sprinklers or jelly beans of your choice.
  12. Store in an air tight jar for upto a week.

  2. Hi, i was just wondering, this recipe has no flour in it so how does the texture turn out, is it just like chocolate?

      1. It uses cornflour.. And no they aren’t runny at all. People have already made the recipe and given awesome feedback with pics in FB groups. Give it a go..

    1. They will stick to each other if you didnt leave enough space between them. As mentioned in the recipe, the dough shouldn’t be runny at all. I dont think you measured correctly.

  3. Hi I tried you recipe and followed it to the T. However the cookies merged although there was enough gap between them and dough not runny either . Did the dough need resting time before baking?

        1. Ah! That might have been the problem dear. I just bought one from Amazon. Buy whichever fits your budget. I find that while baking, weighing on a digital scale makes things less likely to mess up. Xo

  4. Hi, I went through lot of recipes in google for Brookies Cookies and brownies.. And All recipes are adding flour.. But you aren’t?
    Can you please tell me why is that???

    1. As mentioned, this is a Masterchef Australia recipe. You need to make it exactly like that and trust me you will get perfect brookies. There’s a difference between brownies and brookies. The cornflour here produces lighter cookie like brookies. Flour would make things heavier and you wont get those epic cracks either.
