I havent done a whole lot of bread baking as you all know. In fact, I am pretty new to the frothy active world of the rising yeast and I confess, it scares me a little even after 3-4 perfect trials with it. Like the first time I made doughnuts with blueberry filling, I was sending step by step pics to a friend so that she could confirm I was on the right track. We all have people like that right? And boy aren’t we grateful for the friends we make!! What would we do without them!

Next I made this amazing coriander and mint chutney braided bread that was inspired by one of my favorite bakers, a pastry chef by profession, HintofVanillaBlog. If you haven’t yet done so, please go visit her site now! You will be thanking me later when you come away with more inspiration than you know what to do with.

But this time I wanted to bake bread that didn’t take up all day and leave me wearing out the carpet with all the frantic pacing!! So, Irish soda bread to the rescue. A quick google search uncovered more hits than I knew what to do with. I went with the Irish soda bread from my favorite The Kitchn. Everything seemed to point in the direction I was looking for. And I just went with it.

Irish soda bread with honey, raisins and sesame seeds is light in texture and just delicious! We loved ours slathered with softened butter and orange marmalade for breakfast the next morning. Just wrap it up and store in the open for 2-3 days. Cut off a slice and enjoy home made bread at its best whenever the mood strikes.

Apparently there’s always a lot of debate on whats the authentic way of doing Irish soda bread with honey, raisins and sesame seeds. This is just my play on a classic, but I have tried to stick to the basic Irish soda bread recipe (part from the garnish). You could leave it out if you wish and still get the perfect Irish soda bread with honey, raisins and sesame seeds.

I am going to let the pictures do the rest of the talking.

Prep Time 10 minutes
Cook Time 37 minutes
Total Time 47 minutes
Servings 1 loaf

Ingredients

  • 2 cups whole wheat flour
  • 2 cups all purpose flour
  • 2 tsp baking soda
  • 1 3/4 cup buttermilk
  • 1/2 tsp salt
  • 2 tsp honey
  • 2 tsp sesame seeds
  • 2 tbsp golden raisins

Instructions

  1. Start by sifting the flour and mixing the dry ingredients together.

Next add honey to the buttermilk ( I slightly warm my buttermilk). Mix it well.

  2. Now add the honey buttermilk mix to the flour mix. Mix and knead just a few times til it comes together. Dont worry the batter will be quite sticky!

Place it in a buttered bread pan (9" x 5") which has parchment paper lined in it. Smooth the top and sprinkle the sesame seeds and raisins.

  3. Next, with a sharp knife, cut a cross in the top. Make more sharp cuts in the bread. Cover with another 9 inch cake pan.

Place in 375F or 180C oven for 20 minutes, remove top pan, and cook for another 15-20 minutes.

Let cool completely before cutting. Enjoy a slice slathered with butter and marmalade or jam of choice!
