Sesame tofu noodle bowl is an easy, quick and satisfying meal to make when you are craving something spicy and comforting at the same time.This bowl of noodle is studded through with fresh vegetables, sesame and butter crusted tofu, broccoli, and dressed with the most incredible Asian inspired sauce ever.
I shared this on Instagram and Facebook couple of weeks back! I know!! I am the worst. But hey here I am finally. So you know one of those days when you feel like you are scrambling for air? This is it. I have been having those kind of days. Frankly speaking, not too happy about it. I prefer life to be fast but peaceful, hectic but still have some time to pause, sit and play with my child. These last few days have been maddening, in a good way though, so can’t (rather shouldn’t really complain).
Pro of being busy – you are happy that you are working on something you love, you are too occupied to bother about others.
Cons – You usually sacrifice food to squeeze in some more work! I know I do. It isn’t really healthy to be skipping meals, so I seriously hope you wont. I also realised I cant diet to save my life!! By the time it was 4 pm, my stomach was growling in a manner that makes tigers and bears seem tame! After a quick check in the refrigerator I decided to wing it and make this simple but so comforting sesame tofu noodle bowl. Check out these two recipes if you are interested more of one bowl meals.

Frankly speaking I am yet to meet a person who doesn’t love slurping on long stringy noodles, especially when you are starving 😛 So this sesame tofu noodle bowl is a clean out the refrigerator kind of dish. I basically threw in whatever vegetables I had on hand, broccoli, colored bell peppers, carrots, loads of spring onions and of course tofu for some protein. Top that with some sesame seed, noodles and a wonderful sauce made of toasted sesame oil and a few other ingredients , what you have in a glorious bowl.

Sesame tofu noodle bowl
Sesame tofu noodle bowl is an easy, quick and satisfying meal to make when you are craving something spicy and comforting at the same time.This bowl of noodle is studded through with fresh vegetables, sesame and butter crusted tofu, broccoli, and dressed with the most incredible Asian inspired sauce ever.
Ingredients
- 250 gms dried noodles
- 2 tsp toasted sesame oil
- 2 tsp chopped garlic
- 1 tsp chopped ginger
- 1 tsp green chillies
- 1 cup assorted bell peppers ,julienne
- 1 red onion , sliced
- 10 florets of broccoli blanched
- 10 cubes of tofu
- 2 tsp Schezwan sauce
- 2 tbsp Thai sweet chili sauce
- 1 tsp dark soy sauce , use Tamari for GF and vegan version
- 1 stalk spring onion , green part sliced thin
- 1 tbsp sesame seeds for garnish
- salt and black pepper as per taste
Instructions

Start by chopping the veggies, cooking the noodles as per instructions on the package.
Boil the broccoli florets in water for 3-4 minutes (make sure the water in rolling). Drain and immediately put the broccoli in an ice bath ( Fill a large bowl with water and ice).

Saute the tofu lightly in some butter or oil. Add a little chopped garlic, salt and pepper. Let it cook for 4-5 mins till a tad crisp on the outside. Set aside.
Now heat a wok and add the sesame oil to it. Add ginger garlic and chilies. Thrown in the vegetables and sauté for 3-4 mins with salt and black pepper.

Add the sauces and let it cook for 3 mins till the smell leaves. Add the noodles and and toss everything well. Stir fry for 2-3 mins and serve with fresh spring onions and sesame seed.
