Buttermilk and honey sorbet

Buttermilk and honey sorbet is another summer favorite at my home right now. Super cooling, refreshing and healthy frozen dessert that is just what you need to serve at your next summer soiree or just have by yourself in the middle of the night.

Well its almost June and yes, the world does smell of rose. Atleast at my home. My little garden is bursting forth with pink, orange , yellow and white roses. They have taken over my garden walls, climbing stealthily up the trellis and entangling all other plants in their seductive charm. Bees and butterflies spend their day flitting from the lantana and portulucas to the roses and gladiolis. Passionflower has started budding and the nights are abloom with the fragrance of raat kali, gardenia and jasmine. Summer is a beautiful time for gardeners. But honestly though, as much as the nurturer in me rejoices at the beautiful sight of the garden, the chef (and the mom) in me dies at the thought of cooking four meals a day!!

We have given up on curries most of the nights. Instead we sit back, put a few things on the grill, get the pitchers of various flavored lemonade out to the porch and take a break from any heavy duty cooking. 20 hours of the day are spent cocooned in the cool of my home, the air conditioner silently whirring in the background, forever reminding us of the super strong Mr. Sun playing spoil sport in the world outside.


During long summer afternoons and days that seem to stretch forever, ice-creams, popsicles and summer coolers seem to our favorite thing to pass time with. Given that D is still on her school break, and we finally got home after two weeks of holiday, I find myself reaching for the cold snack of frozen desserts more and more often. As much as I love the pistachio popsicles with white chocolate and mango lassi popsicles, lately I decided to take it easy on the sugar. I have always loved buttermilk or chaas as we call it in India. Its such a refreshing and healthy drink that beats the heat like nothing else can. Tart, salty, mildly spiced , a glass of chaas is precisely the reason how I survive the horrid Indian summers.

Yes, you can also make these super easy mixed fruit popsicles or even my favorite masala chai popsicles. They are both super easy and so so delicious! But i prefer sorbet over popsicles. Call me an adult. I kind of fancy a spot of sorbet in between meals or even as a dessert.

Sorbet is quite different from sherbat, gelato and icecream. Apart from sorbet , the other three require some percentage of dairy involvement. Sorbet is basically some fruit and sugar churned together till its smooth yet set solid. Not a granita but not creamy like an ice cream either. Its the perfect foil! You need to try sorbet to understand my love for them. Strawberry sorbet is one of my favorites!


I took my love for buttermilk to the next level my turning it into buttermilk and honey sorbet. Buttermilk by itself is quite sour and tart, so I added a hint of honey to make it just balanced. Grated some lemon peel into it. I prefer my buttermilk and honey sorbet mildly spiced so I added some roasted cumin powder and also added chopped fresh coriander leaf into the mix. Poured it into silicon moulds and let it set overnight.

Result?? OMG!! Creamy yet light, sweet yet tangy, mildly spiced and tempered over with mustard seeds and curry leaves. This was one perfect dessert. That night at our home the only sound as we ate these buttermilk and honey sorbet was the clink of silver against the plates.

Make this as soon as you can. You are going to fall in love with this low fat, healthy, super cooling frozen dessert that also moonlights as an icecream! Buttermilk and honey sorbet is here to stay.

Buttermilk and honey sorbet

  • 500 ml Buttermilk , I used Amul Buttermilk. You can make your own at home too or use your favorite brand.
  • 4 tbsp Organic Honey
  • 2 zest of lemon
  • 1 tsp Roasted cumin powder
  • 2 tbsp fresh coriander leaves , finely chopped

For the tempering

  • 1/2 tsp mustard seeds
  • few sprigs of fresh curry leaves

For plating

  • 1 peach sliced
  • caramel tuile


For the sorbet

  1. Whisk together the honey and buttermilk till its thoroughly mixed. Add the lemon zest and remaining ingredients. Taste, add salt or honey as per taste. 

    Pour it into silicon moulds or any mould of choice. 

    Freeze overnight. 

For serving:

  1. Temper the mustard seeds and curry leaves in a little oil and pour it over the sorbet once the oil cools down a little. Dust with more cumin powder and garnish with caramel tuile and peach slivers. Serve immediately. 

Recipe Notes

For best result, use chilled plate or bowl while serving.

  1. I’m a huge huge huge lover of ice cream, sorbet, ice lollies (what you guys call popsicles) and enjoy them even in the winter, but of course, they come into their own during hot summer months. I love the sound of this buttermilk and honey sorbet, what a simple yet elegant combination.
