Promises promises! I know. I know. I have been slacking again. Well, not that the heat has stopped me from cooking. Its just that I usually get so busy in cooking and taking shots and other work, I kind of dont get the time to write the post. But hey I am here and some really wise guy said it correctly; “better late than never”!

So school break is still on (dear God why!!!), I am officially about to lose my mind trying to keep the kid occupied indoors (thank you mr.sun). Turns out D is just as much into cooking as me. Well she’s getting into the habit of entering the kitchen, playing with the tools and has a curiosity for everything she sees there. Ah. Memories. Reminds me of a certain someone dimpling up at her mom, asking this and that, chatting ninth to the dozen about God knows what. This little sunshine though is ages ahead of me. Do you know just the other day, she flipped an omelette all on her own, without breaking it!! Proud is an understatement. She loves helping me in baking too. And is the souschef for my cooking classes. Thankfully, she’s charming right upto her cute little pinkies and gets away with the most naughtiest twinkling eyes ever.

Turns out she loves making these hand pies or empanadas as much as me. And she loves eating them too!! We had a great time that day, i rolled it out, she helped me cut the circles, smeared on the cream cheesed, spooned the filling and tried to form the shapes too. They werent all perfect but honestly, who cares! She is 5!! And boy, do these mushroom hand pies taste good!!!

I chose very simple flavors for the filling. A classic mushroom hand pie with a few other flavorings thrown in for good measure. Mushroom + white wine+ butter + thyme + garlic = basically heaven. Add to that slow cooked caramelised onions, a little bit of red bell peppers for freshness and jalapeno for heat and boy do we have a winner on hand!

The pie dough is the same as the only pie crust you will ever need. Honestly, just put that recipe in your mind or little black book and pass it on to your children. Promise you will make these mushroom hand pies soon.

Start by making the dough couple of hours before as it does need chilling time. The filling takes barely anytime. Saute some mushrooms in a bit of butter and garlic, add some thyme and cook it all down with some white wine. In another pan slowly cook onions till caramelised. If you already dont, try adding a little sugar and baking powder while trying to caramelise onions. It makes them evenly browned and faster. Next slice some red bell peppers and jalapeno as per taste. I used cream cheese and a little bit of basil chimichurri as the sauce lining these mushroom hand pies.

Next, shape them, brush it over with egg, sprinkle on chili flakes and seasoning (mine was oregano) and bake! Result?? These scrumptious looking mushroom hand pies that just beg to be eaten immediately.

PS: I made these for my parents and they were over the moon at how flaky the crust was! In my mom’s words “100 times better than the ones you get in a cafe”. Now discounting motherly love, it still is pretty darn epic. Make it. Soon. Promise.

Recipe for the crust – ONLY pie crust you will EVER need!

Mushroom hand pies are just the snack you have been looking for!   • 250 gms button mushroon ,sliced thin
  • 1 small red bell pepper sliced thin
  • 1 medium red onion sliced thin
  • 2 jalapeno deseeded and chopped
  • 3 tbsp cream cheese softened
  • 1 egg whisked lightly for egg wash
  • 5 cloves of garlic minced
  • 1 tsp thyme , i used dried.
  • 1 tsp red chili flakes for the crust
  • 1 tsp oregano for the crust
  • 1 pie crust as per the recipe.
  • 50 gms butter


  1. Heat a wok. Add some butter into it and let it brown slightly. 

    Add the minced garlic and thyme and cook till garlic is done. Not browned, just not raw.

    Add the mushrooms into it Make sure the mushroom are all in one layer, not over crowded or they wont brown. Cook on high heat for 3-4 mins, then reduce temperature to medium high and cook for further 3-4 minutes. 

    Add a couple of splashes of wine (about 1/4 CUP) and let the alcohol cook out. 

    Remove from heat and let cool. 

  2. For slow cooking the onions, add some butter and oil into a pan and throw in the onions. Once they start to caramelise (on low heat the whole time), add a tsp of sugar and 2 pinches of baking powder. Continue cooking till the onions are caramelised and tender. DONT rush this. This has to be done only on low heat. 

  3. Keep the remaining things ready. 

  4. For the pies, start by rolling out the dough well. If desired, add your favorite savory herbs into the dough. Cut out 4 inch circles of the crust. 

    Now smear a little softened cream cheese and some basil chimichurri (or your favorite herb sauce) on one side of the circle. Spoon some filling over that half. Now carefully, fold the other half over the filling. 

    Press the dough and seal the edges with a little water. Now pinch the edges and make sure there isnt an opening or the filing will burst when baking. 

    Repeat for as many as you want. 

    Now place them in the freezer for 20 mins. 

  5. Preheat the oven to 180C. When the time is up, bring the pies out of the freezer. Now using a small sharp knife, make criss cross cuts into the dough. Best to do this quickly before the pie softens. 

    Now, brush the pies with egg wash carefully. Sprinkle chili flakes and oregano on top and put the pies on a lined baking sheet. 

    Place it in the oven and bake for 25 mins or till golden on top. Keep a careful watch in the last 5 mins or so. It might take a little longer or less time depending on the size of your pies and the oven. 

    Remove , let cool for 5 mins and serve!

  2. I love empanadas and hand pies. They are just the perfect snack. I would love to try these mushroom hand pies.

    Also, don’t care if the shapes are not perfect as long as they taste good.
