Hello hello!! Boy have I missed you guys and my home here!! I have been the worst hostess ever, havent i? Disappeared without so much as a bye even. But in my defense, i was gone so that I could create a cookbook that you will love to own! Yes, I am almost done with the book. The manuscript has been submitted, a millions pictures taken and now we are at whats known as the editorial phase. We also have an almost date for the release of the book and I will share that soon! 


Meanwhile I am back here!! I have tons of amazingly delicious, easy and summer friendly recipes to share with you guys. And I am going to start with the easiest one.  

Super healthy and so much more delicious than any store bought granola. This Homemade granola with berries and seed is the absolute thing to make. Make one batch and store it! It hardly takes 10 minutes to prepare. Also there’s no sugar or butter in it. Instead I use good for you steel cut oats, all kinds of seeds and mixed berries, raisins, honey and olive oil to turn your regular morning breakfast into something that you will look forward to, even if its just a bowl of granola.

HOMEMADE GRANOLA WITH BERRIES

Homemade granola with berries and seeds is the first thing you need to make this summer. Super healthy, no sugar, no preservatives. Just plain homemade deliciousness and good health all the way! Best part? It comes together in a matter of minutes! 

Ingredients

  • 3 cups steel cut oats
  • 1/3 cup olive oil
  • 1/2 cup honey
  • 1 cup mixed dried berries
  • 2 tbsp raisins
  • 2 tbsp sesame seed
  • 2` tbsp flax seed
  • 1/3 cup pumpkin + sunflower + melon seed
  • 1 tsp vanilla essence
  • pinch of salt
  • 2 tbsp chia seed

Instructions

  1. Start by mixing the olive oil, honey, vanilla essence and salt in a saucepan. Heat over medium low heat for 4-5 minutes till the honey melts and everything is mixed. 

  2. In a large bowl, add the oats, pumpkin seeds, chia seeds, flax seeds, sesame seeds. Mix. 

    Now pour in the honey mixture and mix everything thoroughly so that no dry clumps remains. 

  3. Preheat oven to 350F or 180 C. 

    On a baking tray lined with parchment or lightly sprayed with cooking oil, pour over the oats mix. Spread it out evenly and bake in the over for 20 minutes. Make sure you mix it up at the 10 minute mark to ensure even cooking. 

  4. Remove from oven and let cool to room temperature. Then add the mixed berries and raisins. Mix and store in an air tight jar.
