Brookies are a cookie that is a mix of chocolate brownies and cookies in one little bite. Extremely chewy in the centre, with a typical brownie crackling top, these brookies are perfect for your midnight snack

  • 70% Dark chocolate - 70 gms
  • Butter - 10 gms
  • Granulated sugar - 45gms
  • Cornflour - 16 gms
  • Choco chip - 20 gms
  • Egg- 1
  • Baking powder ½ tsp
  • Vanilla essence ½ tsp
  • Sea salt flakes ¼ tsp
  1. Preheat oven to 180C.
  2. Start by melting the chocolate and butter over a baine marie. Essentially, place the chocolate and butter in a bowl set over a saucepan of simmering water. Slowly the chocolate should start melting. Stir to mix well. Remove from heat and set aside to cool until needed.
  3. In another mixing bowl, combine all the remaining ingredients. beat until light and fluffy.
  4. Now add the cooled chocolate butter mixture and mix until well combined.
  5. Preheat oven to 180C.
  6. Use a teaspoon scoop to spoon the dough on baking trays lined with baking paper.
  7. Top with the chocolate chips and lightly press them into the dough.
  8. Bake for 12-13 minutes in the preheated oven. Remove from oven and set aside to cool.
  9. To make sandwiches:
  10. Once the cookie is cooled, spread some vanilla bean icecream on one and press another cookie on top to make a sandwich. Serve immediately.
  11. Or, smear the cookie with Nutella and top with sprinklers or jelly beans of your choice.
  12. Store in an air tight jar for upto a week.
