Weeknights just demand simple pleasures. Most of the nights, we are so knackered from all the work that by the time we reach home all that’s on my mind is helping D with her homework and making sure there is something on the table for dinner. Usually that means easy quick meals that would be filling for the family and something that even the fussiest of child will eat. For my 4 yr old that usually involves something with paneer, like this super smooth spinach and fenugreek paneer curry otherwise known as palak methi paneer curry. But as grown ups, we really can’t live on just one dish for the rest of the week now can we? Our favorite is this super delicious chickpea pilaf with pomegranates and this extremely delicious and totally adult pasta alla vodka

But when its just starting to get cooler, I somehow get drawn to all things hot and spicy. I am sure you do too.

You know how it goes , don’t you? Its already dinner time, your living room looks like an elf threw up in it and sent toys hurling in every direction, then there’s your mobile continuously buzzing and reminding you that you needed to send out that one important mail two hours back, there’s assignments to check and papers to sign off, grocery to unpack and put away, laundry to run and get dinner started!! God.. how many more years of this do I have to go through? Seriously, the easiest solution that comes to mind on such nights is picking up that take out menu and ordering in some Chinese/Thai.

Almost every Indian loves Indo-Chinese, barring me. I have somehow never liked the overly sauce laden, same old capsicum stirred through dishes that pass for Chinese in India. Now Pad Thai is one major exception, may be coz its Thai. My love for Thai food transcends every other cuisine, even Indian! For me Thai food is everything a good bowl of sustenance should be. Its usually healthy, light, love the coconut milk in most of its curries, adore Thai curry paste in everything, and God..its just so fragrant and light and delicious! The key of course achieving that perfect balance but as Indian, making curries is second nature to us. The base of any curry is pretty much the same, building a good flavorful broth/curry. Like this Thai Noodle soup, now this was so so delicious. In fact, a total non vegetarian like me didn’t even mind the fact that it is vegan!

Coming to this simple 15 min Pad Thai, this is again really simple and clean, healthy as its loaded with colorful vegetables of your choice, flavored with sesame oil, crunchy from the roasted peanuts and served with a sprinkling of sesame seeds.

Further, the sauce that goes into this super fun 15min Pad Thai is made of just 4 main ingredients; tamarind, sesame oil, soy sauce and sugar!! The idea for this brilliant sauce goes to Lindsay of Pinch of Yum and her super yum Lo Mein! If you haven’t seen her blog yet (really???), you must right now!

This bowl of 15 min pad thai with shaved zucchini is actually quite healthy as the proportion of zucchini to pad thai here is 1:1. You can of course alter this to suit your own taste buds but I highly recommend going with this. The 15 min pad thai with shaved zucchini is not only easy and quick, its also super healthy, loaded with colored veggies that are good for you, and well it tastes amazing, tangy and sweet with just the right amount of heat!

I used up pretty much everything I had in my fridge to make this glorious bowl of 15 min Pad Thai. Although colored bell peppers and carrots are pretty much the norm,  I used shaved zucchini and beet root too and we loved it. You can of course make zoodles (Zucchini noodles) if you have a spiralizer. But if you don’t yet own one like me(I know!), simply use your mandolin and shave them off into really thin slices. Toss everything into a wok or skillet with some garlic and onion, add some boychoy if you want, if not add plenty of spring onions. Add the pre-soaked Pad Thai into the wok, add the dressing over the top and toss everything together for 4-5 mins. Serve with some crushed roasted peanuts and sesame seeds sprinkled on top and voila, dinner is served! Bon appetit.

Instructions
For the sauce:
  1. Mix the ingredients together till emulsified properly. Keep aside
For the PadThai
  1. Start by pouring boiling water over the pad thai and letting it soak for 5 mins. Heat a wok or skillet. Once hot, add some sesame oil, chopped garlic and onion and saute. Add the veggies to it and stir fry for 5 mins till fork tender. Next add the soaked Pad Thai, and the sauce (start with half of it), and toss everything together to combine well. If needed add more sauce and toss again. Serve hot garnished with spring onion, fresh zucchini roses, crushed peanuts and sesame seed.

  2. I’m with you Swayam and not too much into the sauces in Chinese food because they use so much MSG and sugar. I would rather have a ton of vegetables, crispy tender, with some juicy meat and a light coating of sauce. This looks like the perfect easy weeknight meal that I can make. A new mandoline was my Christmas present last year along with a spiralizer so this is now on the menu!!
