Avocado and grilled corn quesadilla

Avocado and grilled corn quesadilla is the perfect vegetarian snack that you need to make this weekend. Stuffed with red bell pepper, grilled corn and healthy avocado and drizzled over with balsamic glaze and a spicy smokey chipotle cream this Mexican staple is super delicious, oozing with cheese and so easy to make!

So hey Thanksgiving is over and hopefully so is the food stupor we all have been in!I don’t know about you but after feasting on my mustard crusted chicken roast, twice baked mashed potatoes, carrots in whiskey and those deviled pickled eggs I couldn’t move!!  I know some of my friends had an amazing time with their families. Life tends to take a little longer to get back to normal after a holiday. I feel lethargic to say the least. Well actually feel like a regular good old Garfield who would consider heaven to be a place on the warm couch, TV in front and a bowl of piping hot lasagna beside him!

Me? I am not much different than my favorite cat! I have been binge watching Netflix every night after work (sadly no Thanksgiving holiday in India… ugh.),apparently eating till you burst isn’t reason enough to get off work here. (rolling my eyes you guys) and snacking all the time. So much for the running I do. The way I have been giving in to desserts and all things cheesy I doubt my evening run is going to help me!

So anyways  instead of lasagna (which is a tad bit time taking) , especially if you are like me and cant for the love of God bring yourself to use some bottled pasta sauce. But I did want something cheesy and slightly hot. and quick. and easy. Result??

Its fun. Its fast. Its fabulous!!  Avocado and grilled corn quesadilla are super easy to make and come together really quickly! You start off by well, grilling the corn while you chop up the vegetables. Then you simple saute the red bell pepper, onion, some avocado, grilled corn kernels and place them in the tortilla along with copious amounts of cheese. Then simply fry the tortilla till they are lightly golden brown and crispy and the cheese is melted! Tada… these amazing avocado and grilled corn quesadilla are ready to be eaten.

As you all know by now, I am rather partial to spicy things, so I whipped up a simple chipotle cream to serve with this. But P liked a little hint of sweetness with his cheesy quesadilla, so we also made some balsamic glaze. There are so many ways to use the balsamic glaze, just over anything and everything. We usually have a small jar of it in the fridge. Just take a look at these caprese crostini. This wouldn’t be half as good without the balsamic glaze. Neither would these avocado and grilled corn quesadilla.

Avocado and corn quesadilla
Easy, quick and tasty quesadilla stuffed with avocado,sweet red pepper and grilled corn is perfect for times you crave something cheesy! Served here with a cool and smokey chipotle cream and my favorite balsamic glaze.

Avocado and grilled corn quesadilla
Instructions
For the filling
  1. Start by grilling the corn on the cob till done. Remove the kernels. Saute all the ingredients together till cooked but still have a crunch. keep aside.
For the quesadilla
  1. Heat a skillet with 1 tsp oil. Place two tortilla on it and cook for 2 mins, Now, add half the cheese on one tortilla, top with veggie, then layet with remaining cheese. Finally lay the other tortilla on the choose and cook on each side for 3-4 mins till the tortilla is golden brown and the cheese has melted. Remove, cut into quarters, garnish with more avocado and cilantro and serve hot with the dips along side or drizzled on top!
For the chipotle cream
  1. Mix the ingredients and place in fridge till needed. taste and add more chipotle or salt if desired.

  1. OMG these quesadillas look absolutely incredible! I can relate to the whole feeling like Garfield thing after the holiday too hahaha – good to get some veggies in after!
