Lets get to the basics now shall we? So this had no sugar but it does use honey and a bit of jaggery to give the bread some color. So its not really diabetes friendly. But if you are trying to be healthier, then it sure beats a white/brown sugar loaded bread that claims to be healthy. In place of butter, I have used plain vegetable oil. But you can also swap that with olive oil or sunflower oil. The multigrain wholewheat flour makes the bread way more nutritious than a dessert made with all purpose flour. So make sure to try it with that. Overall, once you are eating it, you wont really realise that its got none of the so called good things that make a cake good.

The ripe bananas lying around the house, this is how I use them. By turning the bananas into a mush and using them to bake this delicious, easy, one bowl bread that is great for quick, gran and go breakfasts or for more leisurely ones on the weekend.

We spread it with some peanut butter and nutella added fresh blueberries on some, some salty pretzels on others and more chopped roasted peanuts for crunch. Served with a cup of milk or even coffee, this banana bread with blueberry and coffee made the whole family happy and satisfied! Best part? Banana bread with blueberry and coffee

Banana bread with blueberry and coffee baked with whole wheat flour, no sugar and no butter! But I promise you this tastes absolutely delightful! Moist, healthy and perfect for make ahead breakfasts, this loaf of banana bread with blueberry is bound to make you one happy person!

Ingredients

  • 3 ripe bananas mashed well
  • 1 3/4 cup whole wheat flour
  • 1/3 cup vegetable oil
  • 1/2 cup honey
  • 1/4 cup milk at room temperature
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp cinnamon powder
  • 1 1/2 tsp instant coffee powder
  • 1/2 cup fresh blueberries or walnuts/chocolate chip/raspberries if you want
  • 1 1/2 tbsp jaggery optional (but it adds color)

Instructions

  1. Start by heating the oven to 180C and line and grease a 9x5 inch loaf pan. 

    In a large bowl, beat together oil, honey and jaggery, add eggs and beat well again till its mixed. Now add the vanilla extract, mashed banana, milk, coffee powder and mix well. You can do this by hand or use an electric mixer. 

    Next, add the baking powder, salt, cinnamon and whisk. The liquid will bubble a bit. Its ok. Once you keep beating it the mixture will calm down and settle. 

    Now add the whole wheat flour and mix it in till well combined. Some lumps are ok. 

    Now pour the batter into the prepared loaf pan. Add the blueberries on top pushing them half way through. 

    Bake for 57-60 mins till the centre comes out dry with only a few crumbs. 

    Remove from oven and let it cool for 10 mins. Now carefully demould from the loaf ( very easy if you use parchment paper, simply peel it off), and let cool on a cooling rack for 20-30 mins before slicing. 

    Options: Spread some peanut butter/ nutella fro extra oomph!
