I am having a bit of a sweet tooth at the moment. Yes, Thanksgiving is over and Christmas is still a month away but I am still thinking all kinds of dessert! As much as I love pies and cupcakes, I am having a bit of a muffin moment for now. I am feeling kind of blur not just coz Thanksgiving is over and its a month to my favorite holiday , but also coz I am down with a stupid fever. Ugh. Isn’t it the worst when your throat feels like its got hot coals in it and your body is a hot mess, in a so not “beautiful mess” kind of way? So that’s  me now. But you know what made me feel better today? Knowing that breakfast was already ready and thankfully I wouldn’t have to bother cooking anything today. With easy and delicious on the go food like this banana coconut muffins with organic peanut butter and walnut streusel ready to go, you can rest pretty easy that your family’s mornings are getting off to not just a happy and delicious start, but also a healthy one!

I try and avoid all kinds of butter and icing where I can and why shouldn’t you! They are loaded with fat, processed sugar and are super unhealthy. So barring the occasional celebratory indulgence, I prefer muffins or cakes made of yogurt or olive oil, fruits and healthier sweeteners like jaggery. Now, lets cut to the chase coz I really need to go get some soup, may be this vegan Thai noodle soup and these avocado and grilled corn quesadilla, curl up on the couch and watch Gilmore Girls!! Nothing like getting a day off in the mid of the week, even if its a sick leave. 😛

So as muffins usually are, this one is pretty straight forward too. An easy one pot mixing bowl, a few healthy ingredients, this super creamy organic peanut butter and the most amazing streusel to top. Banana and PB of course are a classic combination but when you add some toasted coconut to it, top it with dried cranberries and raisins and we have got a winner on our hands! The perfect moist muffins that are loaded with flavor already, are taken over the top with this amazing walnut cinnamon streusel.

Banana coconut muffins with organic peanut butter and walnut streusel
Instructions
  1. Start by mashing the banana well. In a medium bowl sieve the dry ingredients together, flour, salt,cinnamon and the baking powder. Keep aside. Next use an electric stand mixer or hand mixer to cream together the oil and sugar.
  2. Add an egg, vanilla essence and beat till light and fluffy. Now, add the mashed banana, peanut butter,desiccated coconut and yogurt and mix till smooth.
  3. Now add the dry ingredient mix to it by hand and gently mix everything till combined through. At this point I like adding chocolate chunks/chips, and some cranberries or raisins too. Be your own judge and add these opt ins if you so desire. If not, proceed to the next step.
  4. Preheat oven to 425F degrees. Line muffin tin with baking cups or spray with nonstick spray. Set aside.
  5. Make the streusel by mixing ingredients together. Now fill the muffin pans 3/4 to the top, Sprinkle the streusel on top of the muffins.
  6. Next bake the muffins for 5 mins at 425F or 210 C. Then lower the temperature to 350F or 180C and bake for another 14-15 mins until muffins are set and lightly browned.
  7. Allow the muffin to cool for 10 mins in the pan before gently removing it and letting it cool to room temperature.
  8. Muffins can be stored in air tight container for a week or frozen for 2 months.
