So, how have you all been!?? I feel like I am talking to you guys after eons! I know its just been a week but I really missed you good folks! Also, do you know I am so happy today! I got my house back, my space back and I can finally create the food I like and do what I love best, that is talk to you guys. Yes, my in laws are finally gone and I feel as free and light as a bird! Does that make me a bad person? A bad girl? Not sure but I will be damned if I pretend otherwise.
The husband wanted to celebrate with something indulgent and suggested our ever favorite pasta alla vodka. That’s what I was going for when I saw the bottles of beer still lying around in the fridge. So instead of making the pasta, I did what any self respecting foodie would do – create something new!! Chicken burgers are loved in my house. Not the McDonalds or KFC kind (although D is kind of addicted to KFC). The burgers I make at home are simply amazing!! If you haven’t tried my Malai chicken tikka sliders yet you absolutely must! It is phenomenal. And if you are looking for a burger that will make your day amazing, this poached egg burger with garlic aioli is what you need in your life. Trust me. No one can stay unhappy or blue after this!

Wait, does beer in the chicken sound weird to you?? Try it!! Beer is awesome in food, makes a great batter and is pretty cool when added to meat. Like these beer battered onion rings. These are so light and so moreish. Plus: perfect side with these beer drunk chicken burgers!! 1 bottle of beer, two perfect recipes plus a mug of chilled beer to wash it all down with! Win win!!
Coming to these beer drunk chicken burgers, these are incredibly lighter and way healthier than the ones you get in a cafe. I added freshness with tomatoes, and pickled cucumbers and carrots. Also, hellooo egg porn!! Who else loves fried egg that drips all the way into everything in its way?! P sure does and this was so good with the beer drunk chicken burger guys. Of course, the egg is optional but P highly recommended it, especially if you are an egg lover! I love my burgers to be moist and juicy and a little bit contrasting. These beer drunk chicken have so much flavor going for them that its basically like a burger on steroids! Seriously.
The chicken mince is mixed with finely chopped onion, jalapeno, chili garlic sauce and tons of seasonings. Grill it on a pan for 7 mins and ta da… done! Next, while the patties are cooking, butter your buns and grill them, fry the egg, chop the veggies. Of course I added some caramelized onion coz I think it takes everything through the roof, but you can just go with normal slices of onion if you are short on time. Add whatever spread speaks to your heart. My favorite condiments on a burger will forever be sriracha + mint mayo + mustard sauce. Simple. Classic . Perfect.
After 15 mins that it takes to make these, all that’s left to do is be quiet, loosen your waist bands and simply tuck in! Promise, you wont put this down till its all gone!
