You know the way your mom always told you to have your greens when you were a kid, and you didnt listen, but would instead hide them in the ficus plant in the foyer? Well sadly I am still a 4 yr old with the same old appalling food habits. I do eat my greens and veggies but in return I must have a sweet or ice cream! Its a barter system that makes my husband and my life function smoothly. Its a well oiled system that keeps us floating well and in tandem. My eating habits are the same as my 5 yr old. In fact D and me often have a “who can eat more M&Ms in one sitting” contest. Yes, I am “that” mom. 😛
But before you start judging me too harshly, here’s the fact. I do eat more fruits than one needs to. Healthy stuff like smoothies, juices and salads are a daily affair at our house. As are healthier ways to eat baked food. These yogurt orange muffins with poppy seeds is without a doubt my favorite. As is this vegan Buddha bowl!! So so good. I have never been too fond of cauliflower. I guess that must figure given that in the last two years there is just one cauliflower recipe on the blog, a simple mixed Autumnal stir fry veg dish. Cauliflowers are a regular affair in all Indian homes,so much so that we take it for granted. The usual culprits in our house is aloo gobhi, gobi chili, gobhi paratha. Cauliflower has now gained a superfood status alongwith its greener cousin, broccoli. Its loaded in all kinds of proteins and nutrients, anti inflammatory properties , helps prevent cancer etc.
So reason to make this butter and wine grilled whole cauliflower are numerous. Needless to say one of the main reasons is that it is very healthy and right in time for your new year resolutions. I started off thinking that I would make a whole roasted tandoori cauliflower as a vegetarian option. on a certain weeknight. But as I started to make it, I somehow ended up seeing this episode from Masterchef Australia. In one of the famous immunity cook offs between a celebrity chef and Matt Sinclair, the chef made this super incredible butter poached cauliflower. So that day, i decided to give the usual tandori cauliflower a miss and focus on the memory of that poached cauliflower instead. I tweaked it a bit to my taste by adding some thyme and white wine and boy was it good!!
Of course I wont be me if I didn’t try to add a little paprika to it and just a touch of garam masala to make the butter and wine grilled whole cauliflower more aromatic. It takes hardly any time and even less active work to get this ready. In fact, while this is cooking, you can go ahead and finish up your dinner. I like to poach the whole cauliflower in the white wine broth for an hour or so, but it needs 30 mins. Later, just pour over the melted butter all over the cauliflower and put it in the oven to grill for 15 mins basting couple of times in between. That’s all you need to do and done!!
