I have been feeling a little under the weather these past few days. Weekend was bad what with a stuffy nose, sore scratchy throat, a million sneezes and fever. Ugh. Isn’t that the worst feeling ever? Needless to say my weekend was spoiled. As much as i love rainy season, the grey rolling clouds, the hide and seek of sunlight peeking through the clouds, the constant soft drizzle and yes, even the frogs jumping about in my lawn. But at the same time I really hate the unending grey, the way I need to time my day according to the whims of nature and yes, the constant cold and flu that hampers the fun of the season. Not just me, even my lil daughter D fell sick and we had the worst day together. But we did turn it around by snuggling together on the couch, drinking cups of detox tea (for me) and haldi doodh or turmeric latte (for her), watching Frozen, Peppa Pig and Masterchef Australia. But what really made us happy and all the sneezing seem a tad less aggravating was this caprese crostini.

Classic grilled cheese sandwich given an open faced sandwich look here with this delicious caprese crostini. Caprese comes from the island of Capri and is one of the most popular anti pasto (starter) dishes of Italy.

Traditionally an insalata caprese or caprese salad has tomatoes, mozzarella and basil leaves, seasoned with olive oil and salt. They also make the best crostini or open sandwiches. Case in point, this super duper awesome caprese crostini. Its got the traditional caprese flavors going on what with fresh blistered garlic tomatoes, fresh mozzarella that melts and oozes from the crostini and fresh basil leaves to balance everything out. Caprese crostini is everything you want in a simple sandwich. Its fun, fast and fabulous. This is everything I need to pick me up in this weather.

D and me sat together and gorged on this awesome caprese crostini, I added some balsamic on mine and D had hers with ketchup, but seriously this is so so good! Crispy, cheesy and the garlic blistered tomatoes are everything one needs. Try this delicious and super easy  caprese crostini anytime you feel in the need of something comforting.   1. Start by getting the cheese and butter into room temperature before you start cooking. Start by cutting the tomato into thin slices. Heat up a grill pan, drizzle a little extra virgin olive oil and add the crushed garlic to it. Once the garlic is sauteed for 30 secs, add the tomato slices. Fry on high heat for 2 mins, sprinkle some salt and pepper and remove to a plate. !for the grilled toast: Spread enough butter on the bread slices and put them on a girdle. Lay the mozzarella on it, and let it cook till the cheese has melted on low heat. Once the cheese has melted, remove to a plate, cut in half diagonally, add a few tomato slices to it, fresh basil leaves, more black pepper powder, drizzled of extra virgin olive oil. Drizzle with a few drops of balsamic vinegar and serve immediately!
