I know summer is just getting over in most parts of the world, here in India we are waiting for the end of rainy grey days and awaiting the beautiful cooler days with dappled sunshine and falling leaves that are the signs of an impending winter or fall. Honestly though, we don’t have the tell tell signs of fall like my friends in the US or other parts of the world. No leaves turn red here and fall off carpeting the world in a lush vibrant color. No snowy morning here to welcome and soothe our eyes while and reminding of the soon to be here Christmas and Thanksgiving! But yes, there are signs of a different kind in India. The air starts getting nippy and cooler, out come the long sleeved tops and kurtis, people start using ghee and butter in their cooking way more often than earlier, and the coming festivities have an electrifying presence in everyone’s mind. With October, its the time for festivals in India. It starts with Durga Puja or Navratra as we call it , followed by the most awaited festival of the year, Diwali. That gives in to excitement for Christmas followed by New Year.

The other sign is the vegetables flooding the market. I went to a farmer’s market two days back and came back laden with more vegetables than I know what to do with. But honestly when the vegetables are so fresh and vibrant, how long can one resist! Out of all the things I picked up, these gloriously fresh sweet corn were calling out to me. On a whim I decided to make this simple chicken grilled corn chowder.

Fresh sweet corn are available in plenty in the market right now and wherever you see, someone is either grilling them, roasting them on open flame or making dishes out of them. In India, grilling corn or bhutta as we call it on open flame is quite the norm. Sprinkled with some freshly squeezed lime juice, salt, chaat masala and red paprika powder, it is relished by everyone. If you haven’t tried grilled corn on the cob with Indian spices yet, I can assure you that you must!! It is simply awesome!!

Now, for this chicken grilled corn chowder I did use grilled corn coz I love the smokiness that grilling corn brings to a sweet corn soup. It just gives the whole dish a face lift and makes it way better! If you are short on time, you can definitely skip this step, but if you have that extra 6-7 mins, I strongly recommend grilling the corn. Again the chicken here is optional but I usually have some chicken to quickly grill or flash fry for D’s dinner and I do believe non veg adds something extra to soups. So I used the chicken. But again this is totally optional. If you don’t have chicken, or are a vegetarian, you can leave the chicken out. It will be still as tasty.

To start with, the chicken grilled corn chowder is a hearty soup. Its rich, thick and velvety. Its not spicy and super complex like the Vegan Thai noodle soup, or as smooth as the Roasted red pepper and tomato soup, but it is very very good. This soup is a creamier version, its not exactly healthy or low cal since it has potatoes, butter, cream and just a bit of cheese! But boy is it good!! 

So try to make this chicken grilled corn chowder anytime you have fresh corn and want to have something filling and delicious at the same time.

We just loved having this with a side of cheese toast for dinner, I had some green salad also. Try this whenever you are in the mood for a non fussy dinner. Just put everything together, mix and let it simmer for sometime. Strain, add some grated Parmesan, fresh corn, tortilla chips, more chopped chili on top and serve hot! While we are on the subject of hot and fall food, have you tried Nutella Mocha yet? It is perfect for the coming cold days and so so good! Anyone who tries this has loved it. I hope you do too.

Instructions
For the chowder:
  1. start by melting butter in a deep bottomed pot. Once melted, add the garlic and onion and let it cook on low flame till translucent. It takes about 7-8 mins. Then add the flour and fry for 2 mins. Then slowly add the 3 cups of water and keep whisking. Let it come to a boil, keep stirring! Then, add the corn kernels and cubed, boiled potatoes. Add in thyme and bay leaf and season with salt and pepper to taste. Then let it come to a boil, reduce flame and let it simmer on low heat for about 20 mins. Once the soup is cooked, transfer about 3/4 of the soup into a blender and blend till silky smooth. Now add that blended soup back into the pot. Add the cream , cheese and honey.
For serving:
  1. Add the shredded chicken into the chowder and mix well. Now ladle soup into bowls, top with tortilla chips, fresh corn kernels, drizzle of cream and the chives. Serve immediately!
For grilled corn
  1. Remove the husk and silk from the corn. Grill it directly over an open flame like we do in India for around 10 mins or low heat, turning every now and then to make sure its grilled all over. Remove from heat. Hold the corn upright, use a sharp knife to cut through the corn top down to remove the kernels.

  2. I love what you said about using more ghee in their cooking as the weather gets cooler, never looked at it that way before! This is a brilliant recipe, just perfect for the cooler temperatures!

    1. Thanks! That seriously is the trick. Obviously dont add ghee in the peak of summer, but come fall and winter, 1 tsp of ghee is loaded with health benefits! Thanks so much.. <3
