Mix the dry ingredients together in a bowl, flour, cocoa powder, salt, baking powder.
Using an electric stand mixer or even a hand mixer, whip together butter and sugar till pale and fluffy. Now add the egg, vanilla essence and mix till light.
Next add the red color (if using) and mix well. Now slowly add the dry ingredients and mix little by little till everything is mixed well. Stir in the white chocolate chunks and mix till combined.
Cover the bowl and let it rest in the fridge for 2 hours till the dough is firm enough to shape.
When its time to bake, keep a bowl with the powdered sugar ready.
Now quickly break off small bits of the dough and shape into small bowls about 1 1/2 tbsp each. Roll each ball in powdered sugar well ensuring its coated evenly.
Now preheat the oven to 180C or 350F. Once heated, place the cookie on a baking sheet and flatted a bit on the top by pressing gently.
Bake for 14 mins till done. Remove from oven and let it cool for 15 mins before peeling off the cookies carefully and letting them cool completely. Enjoy!
Store in an air tight container for about a week. Dough can frozen for 2 months.
