I cant get Pablo Escobar out of my mind. That and the word gringo. Followed by the very scary guy Gacha and his love for all things Mexican like sombrero and tequila. Fact: I am obsessed with Narcos. Well yes, me and a million other people I assume but hey its a damn good show to chill out with, especially on a lazy Friday when your PJs seem like your best friend and you will get off the couch only to cozy up with some of this super scrumptious one pot healthy gorgeousness called Chicken tikka biriyani (buy rotisserie chicken tikka on cheatdays and save labour!) followed by my favorite indulgent dessert ever – Salted caramel and chocolate swirled pavlova! No icing. Not loaded with sugar. Zero butter = Pavlova heaven. Add salted caramel and chocolate to the airy meringues and what you have is the perfect answer to your dessert conundrums.

So, yeah that’s what I did this weekend. Tucked in and enjoy myself, after quite a while actually. Me and P totally vegged out, binged on za’atar roasted chickpea naan pizza when we got hungry, drank strawberry cream mimosa and totally did a Narcos marathon.  As much as Gacha scared and disgusted me, all the food and drink made me ravenous, even though I am sure I ate more than should be allowed! Talking of Mexico and sombreros made me think how much I want to visit Mexico once. For the food if nothing else. To say that I love tequila is a joke. I love drinking it, I love making cocktails of it and heck I love cooking with it. Case in point, this tequila lime chicken kebab platter that got featured in the Better Homes and Garden magazine and these tequila fired chicken tacos with mango salsa! So good you guys!

So all this thought of Mexico had made me ravenous for some good old churro. I don’t know how I still haven’t shared my baked churro recipe here. Its pretty awesome and kids love it! So anyhow I wanted a cake that day but I also wanted churro!! After dillydallying between the two for a while, I decided what the heck, lets just make churro bundt cakes and be done with it! I can keep my cake and have it too!

That’s how these pretty epic churro bundt cakes came to be. As always I prefer a no icing kind of cake. And lets just keep it a little healthy this year, even while having desserts. Under my food section, you can find a range of healthy bakes that are perfect for just about anytime. And everyone of them is approved my little 5 yr old (ok..extremely fussy 5 yr old). So fear not, go ahead and get baking. FYI these mini churro bundt cakes might just usurp the #1 spot in my books now! Cinnamon + Sugar + butter for the final coating and a final but optional drizzle of chocolate / salted caramel sauce , just to make things more appealing to the little ones. This was warm smelling heaven all in one tiny little pretty cake.

Easy, one bowl and no fuss - cute mini churro bundt cakes. If you are a dessert lover these are a must!!

Instructions
For the cake:
  1. Preheat the oven to 350F or 180C. Grease and lightly flour the moulds. In a mixing bowl, mix together flour, soda and cinnamon powder.
  2. Now in the bowl of a mixer, cream together butter and sugar till fluffy, about 5 mins. Add the two eggs one by one, vanilla essence and mix till light.
  3. Now add 1/3 of the flour mix with the mixer on. Once the flour is incorporated, add half of the yogurt and mix. Follow that up with more flour, yogurt and finally ending with the remaining flour. Fold well.
  4. Spoon into mini bundt moulds carefully to the top. Bake for 50 mins till done. Remove from the oven and let it cool for 20 mins before glazing.
For the churro glaze
  1. Mix sugar and cinnamon and keep it on a plate. Now brush melted butter all over the cooled cakes. Finally rub the cinnamon + sugar mix all over the cakes immediately so that it sticks. Enjoy.
Recipe Notes

Keep in an air tight container for 5 days. Microwave for 30-40 secs before serving if you desire a warm cake.
