I’m a big fan of panna cotta recipes and if given a choice I’ll still have the traditional kind with cream. But as many of you are dairy-free or vegan I thought I’d offer up a new, delicious alternative. And let’s be honest, there’s nothing more delicious than a gorgeous homemade blueberry gun compote to turn a simple dessert like pannacotta into one showstopper of a dessert.


Luscious, creamy, and velvety aren’t words we always associate with dairy-free desserts, but this coconut panna cotta is all that and even more. Lightly sweetened and set with just enough gelatin to make it stand, this dessert is supple and luxurious — like the best puddings — and almost effortless to make.

Essentially panna cotta is little more than lightly sweetened dairy (cream or milk) warmed and then set with gelatin. A perfect panna cotta should be supple, on the verge of falling, and super smooth. You can use almost any form of milk ; nut milk, coconut milk, even yogurt — but for that luscious texture, I always use my sacred ratio of a rough 50/50 mix of a full-fat cream with a lower-fat milk. Here, we are using both coconut milk and coconut cream to achieve this, but you can certainly use two cans of coconut milk to great success too. Blooming the gelatin is the most important step for a smooth texture. Whisk together the dry granulated gelatin and some of the coconut milk until smooth. Use a bigger bowl than you think you need to ensure that every granule gets hydrated to prevent lumps in the finished panna cotta.

Result? After a couple of hours of setting in the refrigerator, you are left with is a delicious make ahead dessert that can be dressed up in the way you wish to. Think simple raspberries with some molten white chocolate layer on top, or may be a tropical fruit mix macerated in a bit of honey or maple syrup, some simple chia berry jam. Its your wish really. I had blueberries by the boxes and decided to turn it into a gorgeous compote before it went bad. A splash of gin is of course always welcome, isnt it? You can totally omit this too. Alright enough talking, now please go make this coz this pannacotta is the bomb!

Coconut pannacotta with blueberry gin compote

This creamy, coconut pannacotta is topped with the most delicious blueberry gin compote for one stunner of a dessert. It’s an easy panna cotta recipe and perfect for those who may be dairy-free or following a paleo lifestyle.

Ingredients

  • 1 can full fat coconut milk
  • 1 can full fat coconut cream
  • 1.5 tsp gelatin powder
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp chia seeds

Instructions

  1. Start by blooming the gelatin. Place the gelatin in a small bowl, add 1/2 cup of the coconut milk, and whisk until smooth. Set aside to bloom for 5 minutes. 

    Place the remaining coconut milk, coconut cream, and honey in a small saucepan over medium heat until simmering, not boiling! Just lightly simmer till you see bubbles on the edges. 

    Remove the pan from the heat and stir in the vanilla, chia seeds and salt. Add the bloomed gelatin and whisk until the gelatin is fully dissolved. 

    Strain into prepared ramekins or use glasses like i did. Refrigerate until set, 3 to 4 hours, or overnight.

    Before serving, spoon the blueberry gin compote over it, add a few fresh blueberries and bits of tender coconut!

    For the compote: 

    Simply simmer 2 cups of blueberries with a little water and sugar. Simmer till its all mushed and syrupy. 

    Remove and add the juice of half a lemon ang 2-3 tsp of gin. Let it cool and store in the refrigerator
