Garlic infused butter noodles is the perfect fall/winter dinner when you don’t want to spend too much time in the kitchen yet want a dinner loaded with flavors. Subtle, spicy and beautifully buttery noodles that just make one feel instantly comforted.
We all have those days dont we? When we crave for a bowl of hot noodles and nothing else will do. Especially Garlic infused butter noodles. I know I get quite bored of eating same curries or flatbreads all the time and today I was craving something slightly spicy for noodle. This Garlic infused butter noodles is the simplest thing you will ever make. Yet, its so layered with clean, sharp flavors that all your tastebuds will be satiated. Completely. All that’s left to do is add more fried garlic chips on top and noodle away.
The butter here is infused with loads of garlic, slowly,till its barely sizzling. At no point are you supposed to brown the garlic here, just gently cook it in butter and extra virgin olive oil till the infusion smells like heaven! Then go on and add some chives or spring onions, green chili and the secret sauce! A further 40 secs, toss in the cooked noodles and cook on high for 2-3 mins. The entire exercise takes merely 12 mins but what you are left with is the most subtly sublime bowl of hot noodles!! Top with more chopped spring onion, chili flakes, fried garlic and twirl away.
If desired you can make this your own in many ways! Think your favorite veggies ; bell peppers, broccoli, mushroom, baby corn, pok choy, chicken. Its even great for cold noodle salads! Again, there’s no restriction on the noodle you can use here; egg noodles, ramen, soba noodles, spaghetti, flat noodles everything works. Go into your pantry, pick out what you have and go for it!

Garlic infused butter noodles
Garlic infused butter noodles is the perfect fall/winter dinner when you don't want to spend too much time in the kitchen yet want a dinner loaded with flavors. Subtle, spicy and beautifully buttery noodles that just make one feel instantly comforted.
- 1 pack (8oz) dried noodles of choice
- 3 tbsp butter
- 2 tbsp extra virgin olive oil
- 12 cloves garlic
- 1 whole green chili
- 3 stalks of spring onion (only the greens)
- 1 tsp red chili flakes
For the sauce
- 2 tbsp schezwan sauce
- 1 tbsp soya sauce
- 1 tsp oyster sauce
- 1 tsp sugar
- 2 tsp hot and sweet tomato sauce
Start by infusing the garlic at the same time as cooking the noodles (as per the package instructions). Saves time.
Add butter and olive oil in a pan. Once the butter has melted add the garlic and let it cook on the lowest heat for 7 minutes. Add spring onions and green chili in the last two minutes and continue cooking.
In the meantime drain the noodles when done and keep aside.
Mix the ingredients for the sauce in a bowl.
Pour the sauce into the pan and cook on medium high for 40 secs. Add salt, pepper and red chili flakes. Now toss in add the cooked noodles and toss it really well with the sauce. Cook on high for 3-4 minutes and serve hot.
Garnish with more spring onion, chili and chili flakes if desired or add your own protein and vegetables!
