The cold is a thing of past in my part of the world and we are witnessing the first glorious days of spring! Flowers bursting forth in all their colorful glory, thankfully bright golden sunshine and clear blue skies are the norm of the day, as are pretty butterflies flitting around. I for one am overjoyed at the prospect of the soon to be spring and summer. Reason? I can enjoy my favorite dessert of all time, frozen treats any time I want. I don’t want to confess but fact is come the warmer days of spring , and you might just see me do ice cream and popsicles for breakfast. Yes, I am that girl. You are with me though right?

D inherits this love of frozen treats from me,her crazy slightly unhealthy Ma. While last year I let it go with mostly shop bought popsicles, I couldn’t stop feeling guilty every time I handed her one. This year though I have decided to do the right thing and make popsicles and ice-creams at home. So brace yourself folks coz pretty soon this space will be taken over by all things frosty, cold and delicious. As much as I love the creamy fudgy ice creams, there is something about a refreshing fruity popsicle that is so much more appealing to me on a hot summer day.

Now coming to these mixed fruit popsicles , well what better way to commemorate the season and the sun than with popsicles! Not in my world there isn’t. These are so delicious and refreshing, like pops of freshly squeezed fruit juice in our mouth bursting forth with flavor and just the right amount of natural sweetness.Mixed fruit juice is one of D’s favorite and I love it too. But I wanted to give it a bit more color. So I made some fresh strawberry syrup and added that to the popsicles. These mixed fruit popsicles were then topped with fresh chunks of fruit like mango, green and moscato grapes, strawberry, lemon crescent, mint leaves and topped further with super food like chia seeds. Sweetened with just a touch of sugar these popsicles are tangy and sweet, refreshing without being cloyingly creamy or sweet. Best part they are hardly any calories in there. In fact its as good as drinking fresh juice, but only in the frozen form and on a stick, which lets face it , makes everything so much more fun!!

Instructions
To make the strawberry puree
  1. Start by chopping the strawberry. Now simply put all the ingredients in a blender and blend till smooth. It should be thick. Set aside.
For the popsicles
  1. Add a little lemon juice to the mixed fruit juice. Taste and add sugar if desired. I haven't for the mixed fruit juice.
  2. Chop the fruits, remember to take the skin off the mango. you can also use kiwi, chunks of watermelon or any fruit you desire.
  3. Now lay the fruit pieces in the popsicle mould. Add the lemon crescent, mint leaf sprig and sprinkle a little chia too. Now slowly pour the mixed fruit juice till about half filled.
  4. Next, top it gently by spooning some strawberry syrup on the mixed fruit juice. Since the strawberry syrup is thicker than the juice, it wil automatically swirl a bit. Now, use a small tooth pick or skewer and very gently swirl it around, trying to create a marble effect. (this part is totally optional, but it does look pretty!).
  5. I topped it with more chia and mint leaf next. Gently tap the moulds to make sure the liquids have reached every corner of the mould. Put in the freezer for 30 mins.
  6. After 30 mins, remove from freezer, carefully insert popsicle sticks (easily available in all mom and pop stores or even craft stores) or the stick the mould set comes with. I like the wooden sticks more. Put it back in the freezer till completely set. My freezer does this in 2 hours but you can let it rest overnight to be sure.
De-moulding the popsicles
  1. Taking the popsicles out might be a little hard if you just want to pull it out. Instead do this simple trick. Run it under hot water for 30 sec and gently pull it out. Tada!! Done.
