Organic brownie cake with Nutella fudge and seasalt is an easy and quick dessert one can make anytime. To travel is to live. So hey, I am back! If you follow me on Instagram you must know that I was away vacationing with my family and soaking in the culture and history of ancient India. We first planned a trip to Greece coz Mykonos and Athens just seem too beautiful to miss, but at the last minute we changed things to an Indian holiday coz of some work related issues. Result? I finally saw the wonder that’s India. Its shocking how granted we take the beauty around us. Even after being in Delhi so many times, i had missed out on its old world charm. This time though the holiday was a learning experience as much as getting reintroduced to the wonder that is India. And yes, I finally crossed off one of the nine wonders of the world : Taj Mahal! What awe inspiring beauty. You must visit it anytime you are in India.

Vacation over I got back to a messy home, laundry piled high into four groups, guests arriving tomorrow (yes, again!) and help on leave! Talk about being put straight into a nightmare. But before I got started on the cleaning, I knew I had to do some cooking. You take a blogger out of her kitchen for ten days, what you get is manic withdrawal symptoms. And we wanted something simple after all the heavy Rajasthani food and eating out at hotels for ten days.

First meal home was this super scrumptious Thai detox lentil soul with spinach and garlic chips, plain rice ,a simple alu bhujia and raita. There is literally nothing like a simple home cooked meal to put a big fat smile on your face, unless its something to do with chocolate, at least in my universe. Once the chocolate craving hits, I know there is only one thing that can solve it. For me it is always going to be brownies. This time though I decided to use the super healthy and organic flour from 24 Mantra Organic and bake some brownies!

D helped with these brownies and these were ready in no time at all. While the brownies cooled off, I decided to whip up some Nutella fudge coz the hazelnut in them is just brilliant and well, its Nutella!! Sprinkling of sea salt later , the organic brownie cake with Nutella fudge and seasalt were ready. I did not eat one while shooting it. But I might have had two. 😛 Don’t judge!! It is the holiday season after all. We loved how fudgy these organic brownie cake with Nutella fudge and seasalt were. And the top?? Well check this out!! So so perfect, right?

An easy one bowl brownie cake that can be enjoyed anytime of the day or year. Cake like center, yet fudgey like brownies with a crackled top, this simple cake is then loaded with a creamy Nutella fudge and a sprinkling of seasalt to take it over the top. Perfect for new Year eve party!

Instructions
For the brownie cake:
  1. Start by gently heating the butter and sugars in a sauce pan. Once the butter has melted, take it off heat and stor in the flour, cocoa, baking powder and egg to form a smooth batter.
  2. Now, line and dust a 8 inch square cake tin making sure to leave some paper overhanging at the side. Pour the batter into the pan. Now push the milk chocolate into the batter at regular intervals.
  3. Preheat the oven to 180C and bake for 35-40 minutes. Cool for 10 minutes and then lift out and cool completely. Next proceed to make the fudge while the brownies are cooling. If desired, you can omit the fudge and have it as is. Just drizzle some chocolate syrup over it and a sprinkling of sea salt.
For the Nutella fudge
  1. Put all the ingredients in a glass bowl and melt over another bowl of gently simmering water. Be sure not to let the glass bowl touch the water. Stor for 5-6 mins till the chocolate chip has melted and everything is smooth.
  2. Now, pour this over the brownies if desired. Cut into 16 squares once the fudge has set. Keep it covered in an air tight container for 3 days or freeze of 2 months.
