So the last two days were quite soul destructing and disappointing, but life goes on, as it must and what better way to cheer ourselves than with some some wholesome homemade happiness! You do know I am talking about food here, right? Food= Happiness for me. But when it is something as healthy and delicious as this Organic chickpea and oats patties my heart pretty much does somersaults of joy! You know how good chickpeas are for you,right? But these organic chickpeas from 24 Mantra Organics are just way too good! In fact they put the G in Good. I have been loving this slow but definite weekly organic recipe I share with you guys and so have you!! I initially thought of posting a chickpea curry I had made, but then on that day I didn’t feel like anything heavy or a full fledged labor intensive meal. The solution was quite simple. Organic chickpea and oats patties to the rescue. Almost like a falafel except that these are healthier thanks to the addition of oats and totally gluten free. I pan fried these patties in just a little bit of oil and there it was ready in under 30 mins.

The mix itself takes hardly anytime and can be made with whatever is available in the fridge. Its quite adaptable and although I use just red onions, zucchini, jalapeno and herbs, you can also add red bell peppers or even grated carrot to it. Oats are quite dry so to ensure that the patties aren’t too dry, I add some extra virgin olive oil, grated zucchini, balsamic vinegar and creamy peanut butter from 24 Mantra Organics. Result is perfectly moist on the inside and crispy outside Organic chickpea and oats patties. Flavored through with garlic, chopped jalapeno and loads of cilantro, these Organic chickpea and oats patties are quite flavorful.

Organic chickpea and oats patties are the perfect way to end a Friday!

Easy,healthy and comforting meal of Organic chickpea and oats patties happily ensconced in a warm tortilla just reminds me of my times at home as a child, with me in a blanket and a plate of my mom’s amazing garlicky aubergine fritters! Add to the goodness of organic chickpea and oats some avocado dip, and well we have a winner on our hands.  Absolutely droolacious you guys! Also, these Organic chickpea and oats patties are pretty versatile.

Serve as is in the form of hot cutlets, or wrap them in a burrito or roti, fix it up in a good old burger, or serve them in a grilled tortilla like me, either way this Organic chickpea and oats patties is filling, healthy and absolutely moreish. I served this with a delightful avocado jalapeno dip that is just the right amount of creamy and spicy, my favorite sriracha egg less mayonnaise. You can go with yogurt if you are looking for a healthier alternative. To top everything perfect on that tortilla I added a few dashes of chili sauce! Place some lettuce on that tortilla, add a few fresh veggies like cucumber,tomato and red bell pepper and well you have a complete wholesome meal perfect for the whole family!

Organic chickpea and oats patties
Instructions
  1. Soak the chickpeas overnight, in the morning rinse and drain them. Now grind in a mixture till grainy textured. Dont add water.
  2. Now mix all the ingredients in a large plate or mixing bowl. Use your hands to mix everything really well together.
  3. Form into patties of about 1.5 to 2 inches diameter. Make bigger patties if you are serving it in a burger.
  4. Heat a grilling pan, add a little oil. Once hot, place he patties in a neat row and cook for 6-7 mins each side of medium low heat. Turn and cook the other side. Check to see if its done. Remove and set aside.
  5. Grill a tortilla in the same pan, place some lettuce. Add 2-3 patties on the tortilla, add your favorite vegetables and the dip, fold and eat hot!!
