A saying we have often heard and well if you are anything like me, often heeded. Frankly speaking I know I must be throwing you guys off here. For the past couple of months, the sweet nothings have taken over this little space here. The love affair that began mid Nov around Thanksgiving and my birthday is still going strong. I am a little surprised that I haven’t given it up yet but hey when the bakes are healthy and not loaded with butter and sugar, one doesn’t really feel the need to, right?

But this thing of beauty here, this Organic strawberry and basil pie, umm.. not so healthy. But boy is it delicious!! If you remember, a few weeks back I shared with you the secret to the perfect and the only pie crust you will ever need. Once you have mastered the art of making the crust , the filling is a world open to you. As you all by now,last quarter I started my collaboration with the super cool organic brand 24 Mantra Organics. This is the beginning of our 4th month together. 12 posts down and still so in love with their amazing range of products they have. Out of the many listed , this month the organic strawberry jam took my fancy. Their flour, millet and jam and spread section will certainly have you coming back for more.

Strawberries are back in season and the markets here are already flooded! Can’t wait for blueberries and raspberries to follow, but in the meanwhile I am going to be coming up with a strawberry series and lets just say, you are going to love it!! Its one of my personal favorites and hey it should quickly become yours too (in case it isn’t). Sweet yet tart, firm and juicy, these little berries are loaded with antioxidants and all kinds of vitamins. Stew them, turn them into syrup, make jam or jelly, bake them, add them to smoothies like this yogurt strawberry smoothie bowl or just eat them raw, there is no shortage of ways to enjoy this delightful fruit. The Organic strawberry and basil pie itself is sheer perfection. Crumbly, flaky, buttery crust filled with the delicious filling of organic strawberry jam, layered with fresh strawberry pieces and fresh basil for a hit of refreshing freshness. The basil adds wonderful herbaceous notes to the otherwise sweet pie as does the lime juice added to the strawberries. A sprinkle of sugar and some milk wash later, what you have is perfect Organic strawberry and basil pie flaky and ready to eat any time your fancy strikes.

Instructions
  1. Measure and mix the water and ACV together. Place in the fridge till needed. Start by combining the dry ingredients, flour, cornstarch, salt and sugar well. Next add the chilled cubes of butter to the flour mix and toss them well. Using either a pastry cutter or just your fingers, cut the flour with the butter till its mixed and butter is of pea size.
  2. Now, add the water + ACV mixture (half of it ) to the mixture. Bring it all together. The dough shouldn't be too dry. If it, just add a teaspoon at atime till the dough comes together
  3. Now give the dough good 4-5 kneads, thats it. Shape it into a disc, wrap in cling film and put it in the fridge for 2 hours before use. When ready, remove to the counter for 5 mins. Dust the area liberally with flour and cut the dough in half. Cover and put the other half in fridge.
  4. Roll out the dough with gentle with strong strokes till its about 1/4 inch thick , flouring as necessary. Now, gently life it up and drape it over your arms and gently cover it over the pie dish. Carefully press the dough into the edges of the pie dish. Cover and Chill. Roll out the other disc in similar fashion till 1/4 inch thick. Cut out shapes using a cookie cutter for the top. Chill till the pie is filled.
  5. Fill it up as desired. Gently lay the stars on top of the pie and cut off the hanging over dough with a knife. Chill again for 30 mins (this helps prevent shrinking during baking) and bake as per directions. Done!!
For the filling
  1. Start by microwaving the strawberry jam for 30 secs till slightly liquid. Slice the strawberries thin and tear the basil into tiny bits.
  2. Spread the strawberry jam all over the crust, top it with sliced strawberries, the lemon juice and basil leaves. Add some almond flakes if desired, optional.
  3. Now layer the star pieces of the dough over the filling. Brush some plain milk all over the crust. Sprinkle some granulated sugar all over the crust. Bake in a pre heated oven at 180 C or 350F for 40-45 mins or till the crust is golden. If it starts browning before time, cover the pie with a foil but continue to bake or the dough will remain uncooked at the bottom.
  4. Remove the pie and let it cool for 30 mins. Serve hot.
Recipe Notes

1. Don't add too much jam to this as the crust will get soggy.

2. Frozen pie dough can be stored in the freezer for two months. Just let it thaw for 30 mins on the counter before proceeding with rolling it out.
