Diwali is almost here! Gosh.. can you believe it? I am still stuck somewhere in June, at least mentally. It seems impossible to me that its already time for Diwali and Halloween. Before we know it, it will be time for Christmas and New year!
Diwali is usually a busy time for everyone in India. The festival of twinkling lights and a hundred colors comes with its own plethora of rituals that every Indian celebrating this festival loves to do. At my house Diwali cleaning will commence soon, hopefully this weekend if I am not distracted by something else or too lazy to actually do it. Friends start arriving with party invitations and I get busy planning our annual Diwali bash. Given that everyone in the neighborhood knows I like cooking, people have gotten used to expecting delicious food and well I gotta keep that up right?

Now this organic tapioca pudding with honey caramelized pineapples happened very randomly and during Navratra actually. Given that most people do a falari fast, I thought of trying something similar and these tapioca pearls or sabudana were the obvious choice. But instead of keeping it traditional, I gave this organic tapioca pudding with honey caramelized pineapples a fun and modern dessert twist. Remember Billy from Masterchef Australia?? Well, she was my absolute favorite from day 1 and a few of her master dishes have always been on my mind. I remembered something similar she had made and I thought it the perfect time to give this a try.

Basically you cook the soaked tapioca pearls in coconut milk( can use normal use too) for 15 mins till they turn translucent.So while that’s happening, go ahead and caramelize those pineapples! Caramelisation is basically a simple process of melting sugar (well organic honey in this case). Here I stir through fresh pineapples in the honey caramel so that they become coated with sweetness and get that smokiness from it too. Its just amazing! If you are new to caramelization, don’t be afraid. Its really simple and my recipe will guide you through it. But you have to be careful and keep a close watch. Don’t leave it on heat and go dance or start doing laundry! Please 😛
So here I used this amazing organic wild honey from 24 Mantra Organics and I just loved it! It tastes pretty awesome raw and so good when caramelized. In fact I used the 24 Mantra Organic honey they sent me as a sweetener too. And for good measure, (and well because it tastes so good raw) I drizzled some on top!! Yum yum yum!
To serve this, I chose my favorite style to serve desserts in; that is dessert glasses! I love serving desserts in glasses. It immediately makes them look so much more appealing since you can see all the layers. I also love contrasting textures in desserts. So along with the cool tapioca pudding we have the warm honey caramelized pineapple, that was then topped with a crunchy pistachio crumble, followed by fresh pineapple that added so much freshness to the dessert and balanced the sweetness perfectly! Top that with few slivers of almond flakes and salted pistachio, a final drizzle of raw organic honey and voila.. you have the dessert of your dreams! Without being too unhealthy or filled with sugar and cream or butter! Now that’s definitely a dessert worth savoring in my books. All the deliciousness, zilch guilt!
Diwali party? Have no worries. This is make ahead and stays perfectly well in fridge for up to 2 days, covered. But before serving, bring it out for 30 minutes to allow the tapioca to loosen up. Garnish when you serve of course and the caramelized pineapples need to be warm! So its partially make ahead but hey, the toughest bits are done!
