Organic Thai detox lentil soup is the simplest way to add some wholesome goodness to your meals. Organic rich mixed lentils cooked with vegetables and Thai curry paste form the base for a delicious and comforting soup that is rich in nutrients, minerals and extremely wholesome. Serve either with a piece of grilled ciabatta or even steamed rice for a perfect weeknight meal.

Today I am going to take you on a healthy trip. Hang on, its not bad at all! In fact healthy is the way to be, starting now. What most of us forget to understand that healthy doesn’t imply going on crazy diets to lose weight or starving yourself.In fact that’s the exact opposite of everything healthy eating stands for. 

Healthy eating simply means being aware of your body. Being aware of the food you put inside your body and treating your body with the respect it deserves, coz frankly if you don’t care about your own health, no one else will. I don’t diet (obviously as you all know well enough). I am not size zero either. Heck I am a size X. And I don’t really care. Coz at the end of the day I know I am healthy. In fact I am stronger today than I was 5 years back or 8 years back when I was 22 and started working at the bank. Today, I can manage a host of things, multi task from 7 am till 2 am at night without feeling too drained. I exercise. I practice yoga. OK. So I cant meditate yet (too much of a type A personality to quiet the ever whirring mind). I do my job and blog and cook and teach D and play with D and the list of never ending things that is the norm for us working moms. How do I do it?

I learnt the important and extremely crucial task of “balancing”. Balance is what drives me. I am always pro life and work balance. Similarly, I am all for balance at eating. I don’t starve myself. Never. So if you see my indulging in the season’s best pumpkin tomato baked pasta one day, you might see me have just a platter of fruit or some Moroccan roasted pumpkin soup for dinner the next day. Balance I tell you..that’s all there is to it. 

Given that we are celebrating Navratri right now, and since I live with a family of ants who absolutely can’t go without sweets, we have been indulging in sweets this week. Last week, I made this super delicious 8 ingredient only Mong Dal Halwa or Lentil fudge cake. Its got ghee and sugar. So yesterday for dinner I changed things up and made this extremely healthy and so so delicious organic Thai detox lentil soup.

Why Detox? Well mostly coz we all need to follow a detox dish once in a while to make sure we give our bodies the space and break it deserves. Lentils are one of my favorite proteins. Packed with nutrients and good health, a bowl of lentil is a great way to ensure your family gets their dose of proteins, on a daily basis. This is especially important for vegetarians. Thankfully D and Daddylonglegs P both love any dal or lentil that I cook up and we usually finish the whole lot quite happily. If you haven’t yet, you must and i mean MUST, try my Dal Fry and lentil in coconut milk. You will never think lentils are boring again!! Promise. 

So lets talk about this organic Thai detox lentil soup a bit. As you guys know I love Thai food. Its one of my favorite cuisines as is evident from the fact that I have a host of Thai dishes on the blog. Remember the vegan Thai noodle soup? Or this Thai basil chicken and PadThai shrimp salad bowl (on youtube too!)?? God..so so good. My mouth is watering at the thought of that meal! Sorry.. where was I? Right. So Thai. Thai is a very versatile cuisine, one that lends itself beautifully to our Indian khaana. I am not kidding. I made a Thai style paneer that takes 15 mins to grill, is super healthy and so good its been published everywhere from Huffington Post to Yahoo,and the Hindu to a number of times on Buzzfeed.com!

So while trying out 24 Mantra Organic mixed lentils that day I thought why not “Thai” this too!? After all a Thai curry base is perfect for any kind of soup. With that thought in mind I set about making this delicious one pot organic Thai detox lentil soup. To my surprise, these beautiful organic mixed lentils got cooked in 4 whistles in the pressure cooker as opposed to the usual 6-7 it takes for my regular dal. And it was so creamy! The moment I let out the steam , I knew the lentils were going to be awesome!

Organic Thai detox lentil soup is just the pick-me-up you need this season, or just about anytime. 

The organic Thai detox lentil soup is quite simple after that. Make a base of flavorings (onion, ginger, garlic) and Thai green curry paste, add whatever vegetables you like ( I went with carrots and pumpkins), topped with wilted spinach and garlic chips, a drizzle of fresh coconut milk and some Thai chili and fresh coriander. The entire process took me 30 minutes to make. I used a ready made Thai curry paste, but if you have the time make a batch of curry paste and store it. 

This organic Thai detox lentil soup was so delicious. Extremely fragrant and flavorful, creamy yet soup like, the bits of carrot and pumpkin studding the bowls like little bright colored jewels and oh the goodness of spinach with garlic chips!! What can be better?? Wait.. add just a little drizzle of coconut cream , a squeeze of lemon juice and there you have it.. perfection!! Detox with balance. Remember the key? Organic living with a balanced diet. No fads. No diets. Just plain and simple good food. That’s what this is. 

We sat down for dinner quite happily that night. Its getting a little cooler here in the evenings..and our garden makes the house so cool. We lit some candles,  brought out bowls of this gorgeous organic Thai detox lentil soup and enjoyed it with some grilled ciabatta. D of course loved hers with some good old steamed rice. Instructions
to cook the lentil
  1. I use a pressure cooker to cook the lentils. If you don't own one, you can find one in my shop section. They are extremely handy and save a lot of time. If not, you can boil the lentils in water. It will take about 30 mins. In a pressure cooker, add the cleaned and washed lentils with 2.5 cups of water, salt and turmeric. Close the lid and cook on high heat till it whistles. Cook on high for 2 whistles, then lower the flame and let it cook for another 3 whistles. Once done, switch off the flame and let the steam release naturally. Meanwhile, get started on the soup base.
For the soup
  1. Start by heating 1 tbsp oil in a large pot. Add the flavorings, onion ginger and garlic and saute on low heat till translucent. Do not brown. Add the carrots and pumpkin, add salt, a dash of turmeric and cook till half done. Now add the Thai curry paste and cook for 5 minutes, mixing the entire time. Once its done, add the cooked lentils, water and mix well. Let it come to a boil. Then reduce heat and simmer for 15 minutes till it reaches the consistency you desire.Add 2 tbsp of fresh torn basil. Keep mixing once in a while to avoid it sticking to the bottom of the pot.
For the spinach
  1. In a pan, add 1 tbsp olive oil. Add finely sliced 4 cloves of garlic. Let it become golden brown.Add the drained spinach and cook for 1 min till wilted. Keep aside.
To serve:
  1. Ladle the soup into bowls. Top with fried garlic chips and wilted spinach, Drizzle the coconut milk and garnish with coriander, fresh basil and deseeded Thai chili. Serve with lemon wedges to be squeezed on top if desired. Enjoy!

  1. Sensational. I was totally drawn in by the photos which show off this soup to perfection. I’m in agreement with your line of thinking – avoid diets and try to eat healthily and balanced. If you slip one day and have too much of a good thing, don’t be hard on yourself, just make it up sensibly over the next few days. With food like this it is seriously not hard to eat well whilst being healthy and I could do well to remind myself of that fact more often. My kids quite like a Thai curry as long as it’s not too hot, so I think this detox soup is going to skip to the top of the queue – I’ve just printed out the recipe and will be making it early next week.

  3. Ha! Ha chica. You sound like me. I tried to practice yoga with every intentions of using it to help me calm my chaotic mind. . .but it just didn’t seem to work and the yoga instructors always would zip right over to me, shake my clenched hands, and calmly tell me to relax. I guess that is why I now stick with intense cardio and weight training (it’s okay to clench the fists and get the adrenalin soaring).

    I try to eat healthy (with frequent dessert tastings thrown in the mix. . .a tough necessity when you are running a baking blog) and the Mr. and I are always looking for new and exciting ways to sneak extra protein into our meals. I recently discovered lentils. . .and boy can I say they sure are a tasty way to up the protein in just about any meal (love that you can even sneak them into desserts). And they look so lovely in this soup. I love all the exotic flavors you managed to sneak into this. And that coconut swirl. . .so, so mesmerizing.
