If you are a woman, I am sure you already know what I am talking about. Much like the hydra, us women are blessed with the ability to think of 10 different things, do two things at one time and invariably fare better than our macho counterparts. No offence to the dudes. You just ain’t built the same. God just put extra effort into us is all I am saying 😛
So I was talking about religion right? For some reason religion has everyone in a tangle these days. Its a taboo subject! I fail to understand when and where we thought it a taboo to discuss religion. I am not talking the religion of politics or even Hindu vs Islam vs Christianity. Hell, as far as I am concerned, I am still searching. But this much I know, if it were up to me, I would preach one religion. The religion of kindness.
So anyways enough preaching. Let me quickly come to point here before I digress. I don’t want to talk anymore about Diwali or how pretty it is! I am sure you have been reading that in my last 3 (or is it 4?)posts! Nah. Let me talk to you about this spectacular dessert that is the organic vanilla lime pannacotta with honey saffron gelee. Pannacotta as I have often said is the simplest of desserts. Of all the things I am grateful to the Italians for (and I am looking at you my dear sweet bowl of spaghetti), pannacotta stands second in the list. As you all know by now, I am not too fond of going the usual ladoo for pooja route. With boundaries vanishing today, why limit your Diwali party options to the same old Indian dessert??
There is absolutely no reason for you to! With this incredible organic vanilla lime pannacotta with honey saffron gelee your party menu is set! It takes 20 mins to make, put overnight in the fridge and bring out for dinner on Diwali or just about any time you want to enjoy a super delicious dessert. Who wouldn’t love this?

Organic vanilla lime pannacotta with honey saffron gelee isn’t laden with copious amounts of ghee, butter or sugar.
Its just cooked cream topped with some honey gelee (or jelly). The flavor for something this simple is out of the world. People often think cooking simple food is really simple. Fact : The trouble with simple food is that there is much less wiggle room! If you do a mistake it is glaringly visible. The same holds true for organic vanilla lime pannacotta with honey saffron gelee.
The pannacotta is really simple. It is flavored with orange essence and vanilla and some lime in it, making it the perfect foil between the creamy panna cotta and the sweetness of the honey gelee. The honey gelee has saffron soaked water to give it a sublime aroma and a beautiful color. Served on Diwali in a festive platter it looks as good as edible gold!! So so pretty! And did I mention delicious??
I used the organic honey from 24 Mantra Organics to make this super delicious organic vanilla lime pannacotta with honey saffron gelee. The organic wild honey is so delicious that by itself it is perfect for the gelee, but when you add some pre soaked saffron to it, the aroma just takes the whole thing over the top. The orange essence in the pannacotta marries the lime and honey gelee perfectly and every bite becomes a smooth cooling sensation on your palate.
This is what I am serving for my Diwali bash along with my favorite 10 min no sugar pineapple sandesh and the butterscotch phirni! Indulgent desserts like these are a must have during festive occasions and soiree and I am sure your guests will love having spoon after spoon of this super silky, perfectly wobbly glass of organic vanilla lime pannacotta with honey saffron gelee. - 500 ml full at fresh cream
- 1/2 cup Milk
- 2 tbsp gelatin powder
- 2 tbsp sugar
- 1 lemon juice
- 1 tsp orange essence
- 1 pod vanilla bean scraped
- 1/3 cup organic honey
- a pinch saffron
- 2 tsp gelatin powder
- 1/2 cup water

- Start by soaking the gelatin in milk. Give it a quick stir and set aside for 5 mins. Next, add the cream,scraped vanilla and sugar in a sauce pan and heat it up. Remember not to boil the cream. Just cook on low for 7-8 mins till sugar is dissolved. Remove from heat. Now stir the gelatin and milk together to make sure its mixed well. Pour that into the cooked cream mixture and give it a quick stir making its the gelatin is mixed. To check, rub a little amount between fingers, It shouldn't feel grainy at all. Let rest till it reaches room temperature. Once cool, add the juice of lemon and mix everything well again. Dont worry about it not being too sweet. The honey gelee will balance the sweetness perfectly. Pour into serve ware and cover with clingfilm. Put in the freezer to set for atleast 2-3 hours. Proceed with the gelee only when the pannacotta layer is set!
- Again start by soaking gelatin in 1/3 cup water. Stir and leave aside. In another saucepan, mix 2/3 cup water and 1/3 cup honey, pinch of saffron and cook for 5 mins. Immediately pour the gelatin into it and mix well. Remove from heat and let it come to room temperature. Once the first layer has set, gently pour the cooled honey gelee on top of the pannacotta, cover with a cling film and put it back in the freezer for 3-4 hours to set properly. If you are not in a rush, let this set in the refrigerator (not the freezer) overnight. While serving, garnish with fresh orange slices and few more strands of saffron.
1. If your set this in the freezer:
Remove from freezer 30 mins before serving time.
2. If you set it overnight in fridge (my preferred method), remove for just 5 mins before serving!
