Organic vegan millet porridge is the next breakfast to turn to when you are bored of the same old smoothies and oats. Cooked in fragrant coconut milk, these extremely nutritious and gluten free millet are just as delicious eaten sweet. I topped this with pomegranate poached pears, kiwi, cranberry chutney, chia seeds,pistachios,walnuts and almond flakes for a healthy and wholesome breakfast.
Time flies. Mostly when you are having a whale of a time. This year has flown by in the blink of an eye for me! I was quite dreading this. Dreading turning a year older, but hey what do you know, I am finally in the thirties and I don’t feel any different. I mean sure there are a few more grey strands than I would like, i guess wrinkles here and there, a couple(read 10) pounds heavier than I was last year but if food is your living, your calling and your livelihood that is bound to happen right? I am also, a little wiser than I was last year. Thankfully. I am closing this year with a heart full of gratitude for everything I have, for everything I have been blessed with. And yes, with a note to self about trying to lead a healthier lifestyle.
One thing happens as we age, we ponder over our choices. For me, its mostly related to food. As much as I love food, I have been trying to cut back unnecessary calories wherever I can and make healthier choices. Now lets talk about this particular organic vegan millet porridge. I love starting my mornings on a light and healthy note. Case in point this overnight oats in coconut milk with mango brulee and cherry compote or this super duper healthy Tropical coconut chia pudding. Occasionally though, I give in and have a plethora of different toppings on whole wheat breads like this caprese crostini or just a super filling drink like pineapple banana chia smoothie!
But these get pretty tiring.Boring if had day after day. This is where trying new products comes into play. 24 mantra organics has a wonderful range of products to choose from. This time, I decided to up my breakfast game with this vegan and gluten free alternative to oats, toasts and smoothies.
This organic vegan millet porridge is pretty much everything you want to start your day with.
Its light yet filling, loaded with nutrients, has super foods like chia seeds, almonds pistachios and walnuts, is vegan and delicious as it is cooked in coconut milk and has the fall favorite pear! I actually poached these beautiful pears in some grenadine syrup for the color, but you can omit that and just top it with fresh pears and kiwi too. The cranberry chutney offsets this beautifully! Sweet and just a hint of tartness balance the whole dish perfectly and make it fit for anyone wishing to lead a healthier lifestyle. To further up the ante of this simple yet exquisite breakfast, I gave this organic vegan millet porridge a textural overload. Think smooth warm fragrant from the coconut milk organic little millet topped with a wide range of things!
I am talking poached fruits,fresh kiwi,sweet and tart cranberry chutney, organic almonds, pistachios and walnuts and a further sprinkling of the super food chia seeds. Can a bowl of simple food get any better or healthier than this? I don’t think so! So what are you waiting for? I am starting this new year in my life by making the right choices. - 1/2 cup organic little millet
- 1 cup coconut milk
- 1 cup water
- 2 tbsp sugar or sub with honey/jaggery
- 1/2 tsp Cinnamon Powder
- a sprinkle of grated nutmeg
- 1 pear, sliced thin poached in grenadine or kept fresh
- 1 kiwi cut as wish, I made stars
- 2 tbsp mixed nuts pistachios,walnuts,almond chopped
- 1 tbsp chia seeds
- 2 tbsp cranberry chutney
- 1 tsp organic honey drizzled on top

- Start by grinding the millet into semi powder form. In a sauce pan add the water, coconut milk and sugar and bring to a boil. Add the millet, stir well and cook on low for 10 mins. If it becomes too thick add a little milk (1 tbsp at a time) to reach the consistency you desire. Remember it becomes thicker once cooked so keep it more watery than you like it. Pour into breakfast cereal bowls and get ready to top it.
- Top the bowl of porridge with poached pear slices, fresh kiwi, cranberry chutney, mixed nuts. Sprinkle the chia seeds on top and drizzle with honey to finish. Enjoy!

Interesting, I have not used millet very much in my cooking and certainly never in the way, great looking dish.
