Organic za’atar roasted chickpea naan pizza is the perfect vegan party stopper you and your guests definitely need in your life! Simple and easy to make, these flatbread or naan pizza are made using organic flour from 24 Mantra Organics. To make things healthy and a little more appealing, I topped this naan pizza with za’atar roasted organic chickpeas, mozzarella and spread a basil cilantro pesto on the base. Give this a try anytime you want to serve your guests or treat yourself to something deceptively easy yet delicious!

At the cost of sounding like a broken record, let me ask you again “when did it become year end and where exactly did the year fly away?” I am sure you are all having the same thoughts as me. But hey, I am not complaining. Its been a pretty good year for me! I hope you have had some really good memories to remember 2016 by too.

One of the major highlights of this year has been my long standing collaboration with one of the leading organic brands of India, 24 Mantra Organics. As you know, I bring you one organic recipe every week. This week though I couldn’t help sharing this extra good dish with you all. Its an added bonus that it is right in time for New Year eve party and just as good to start 2017 on a healthier note. And talking about healthy, it doesn’t get more perfect than the New year party to serve this mustard crusted chicken roast with spiced orange sauce!! Its a must you guys!!

We are true blue North Indians who love their chicken and paneer with butter naan. Given that naan makes an appearance on our dining table every week, I have kind of perfected the art of making instant naans, without using any yeast. Result?? I can now make instant butter naan whenever I want or D sweetly demands for some. 15 mins is all it takes to prepare these instant garlic naan and the result is completely restaurant worthy super soft and pillowy flatbreads with just the right amount of char. I have been making so many New year party worth dishes in the past couple of weeks but these are definitely on my list! So go on take a look at these and try to make some of them. I promise you will love it all!

For the New year party I wanted to turn the usual naan into something more appealing to a party. And since naan and gravies are passe at any dinner parties, I went ahead and made the simple yet absolutely favorite dish of everyone, gender and age no bar. Yup, I am talking about pizza!! But not just any pizza. I am talking a super gourmet style organic za’atar roasted chickpea naan pizza.

If you haven’t had flatbread pizza or naan pizza yet , you are definitely missing out. It takes the simple pizza to another level. Almost thin crust, hand tossed and just so much more novel than serving the same old pizza at gatherings.

The range of toppings one can put on the pizza is limited only by one’s imagination. Keeping in mind the many vegans in my guest list, I made this particular organic za’atar roasted chickpea naan pizza. Za’atar is one of my favorite spice blends ever, followed by ras el hanout which I use in the Moroccan roasted pumpkin soup that I will be serving at the party. Za’atar is easily available in all gourmet stores and has garnered real popularity in the last year. If everything else fails, trust the Amazon Gods and order a jar today. I make za’atar spiced chicken crepes that are a favorite at  our home and my personal favorite za’atar roasted chicken with moscato grapes.

To make this organic za’atar roasted chickpea naan pizza, simply spread some pizza sauce on the base of the naan, add some good old basil cilantro pesto over it and sprinkle enough mozzarella and cheddar to cover the naan. Top it with the za’atar dusted pre-boiled chickpeas, spinach leaves and just about anything you want on it. I love a little contrast in my pizza and add fresh green peas and pomegranate aril to add pops of sweetness to the pizza. That’s seriously about it. Then just put it into a pre-heated oven for 5-7 mins till the cheese melts and the naan crisps up a bit. Cut into slices and enjoy!!

Make these for the New year, whether you are having a party or its just you and your better half cuddled on a couch is immaterial. What matters is just how delicious and easy this organic za’atar roasted chickpea naan pizza is.

Organic za'atar roasted chickpea naan pizza
Instructions
To make the naan:
  1. Start by sifting the flour, baking soda and salt into a bow. Then make a hole in the center of the flour and add the yogurt and oil. Using a spoon or your hands, start mixing till it comes together. Add water little by little if it looks too dry. Once the dough has come together, it should be smooth and soft. Then cover it with a damp kitchen towel and let it rest for about 15 minutes.
  2. Pinch off tennis ball size balls from the dough. Dust with a little flour and roll the dough into a 3 inch disc.While rolling the disc, make sure not to press too hard. Then simply use your hands to pull the disc from both sides to make it into an oblong shape. Keep the remaining dough covered with the damp towel at all times to prevent loss of moisture.
  3. Now, turn it over and brush water on the other side. In the meanwhile, place a flat pan/griddle/tawa on medium heat. Also, keep a lid ready. The lid should fit the pan to cover the flat bread. When the pan/griddle/tawa is hot, place the wet side of the flat bread on the pan and cover it with the lid immediately. The bread will start puffing up in few seconds. Let it cook for about about 30 to 40 seconds and then open the lid carefully. Drizzle ghee/clarified butter on top and turn the flat bread. Add some more ghee to the sides of the bread and let it cook for another 30-40 secs. Remove from the pan and serve immediately.
to make the pizza:
  1. Over the cooked pizza, spread the pizza sauce, followed by the pesto. Sprinkle the cheese uniformly leaving a 1/2 inch gap around the sides. Layer over some greens and top with the za'atar mixed chickpeas. Sprinkle the spices, peas ,pomegrates and basil. Add a little extra virgin olive oil. Pop into a pre heated oven at 180 C for 7-8 mins till cheese is bubbly and melted and the naan a little crisp. Serve hot, sliced into pieces!
