Hello people! How are you folks? I am so excited that its finally Friday and tomorrow is the second game night. But more than that , its weekend!! Hallelujah! I have had an absolute crazed week and been looking forward to the comfort of my home and the joy of doing nothing. Have you had one of those weeks too or has it been relaxed? Either ways I hope it was a good one!

So I am going to make this a quick one today. Not because I don’t have anything to say but because I am in the midst of cooking something for tomorrow and right now its taking up every iota of my brain space. If you follow me on Facebook you must have seen that I am thinking of starting a new series for the blog. I usually cook without a lot of planning and it all depends on my mood that particular day or even moment. But this new series is going to take a lot of planning, an immense amount of effort and a lot of time. But it is something close to my “ever fond of nostalgia” heart, ergo – really excited to start this series! 1st post coming week for sure!! Yay!

But coming to this Friday, I have planned something extremely easy for tonight. D has a birthday party to attend and the Mr. and me wanted nothing heavy tonight. Friday is our usual date and movie night. Sometimes its just dinner in a nice place, sometimes movie. But I definitely cook the least on Fridays. Most people take a break on Sundays, not me though. I cook a full gluttony inducing meal. This pineapple jalapeno salsa though is the simplest thing ever. Just cut up the fruits, soak in the juice, let rest overnight and serve with nachos. Tequila optional but highly recommended if you are over 21 and wanna have fun! 😛

I went with pineapple jalapeno for this salsa as opposed to the usual tomato salsa route. Every restarant serves the tomato salsa. I wonder why!! Pineapple jalapeno salsa is definitely delicious, so refreshing, healthy and just bursting forth with flavors. I added some ripe mangoes in to the salsa  coz I am rather partial to sweet bursts in savory meals. And it turned the pineapple jalapeno salsa into complete perfection.

Instructions
  1. Chop all the fruits and vegetables into the tiniest bits that you can. Use a chopper or do it by knife like me. Put in a mixing bowl. In another bowl, add the spices to the lemon juice and sugar, mix well. Pour this over the fruits, add the cilantro and mint. Cover and let sit for atleast 2 hrs to overnight in the refrigerator.
  2. When ready, give it a good mix and serve along with some nachos or chips. Perfect as a topping on any grilled meat, chicken or fish. Store in an airtight container for 5-7 days in the fridge. Adjust lime and chili as per taste.
