When I woke up this Monday I was cranky and groggy. I had slept really late on Saturday and had a little too much fun for my own good. Note to self- “you are no longer the party animal you were at 22″. Remember that and this headache next time P asks you to live a little. Arggghh. Where are the blinds! Someone needs to draw the curtains.

Anyways as we all know, after a horrid late night the only thing anyone wants is to crawl under the covers,sleep till afternoon and wake only to a cup of steaming coffee magically appeared on the side table, err.. with a side of crisp fresh newspaper and some pretty blooms of course! This pumpkin spice white chocolate latte happened on a similar kinda morning, except that I was the genie that made this happen and my master was P ( in a very Aladin kind of way). He did wake up, looked at the newspaper and the zucchini rose toast, picked up his cup of coffee only to take a deep whiff and put it down.

What followed was a slow “what is this magic” kind of incredulity! Then without even waiting for an answer he took another deep whiff and started sipping! Slowly, after 5-6 silent long sips he looked up at me and gave me a smile that I knew meant thanks for being a lifesaver 😛 So good!! If you seem a little wary of the combination, don’t be!

Pumpkin pie spice and white chocolate are a match made in food heaven, add some good old coffee to it and what you have is an elixir of sorts!

Since its important to try and improve oneself, I thought why stop at food!? After all aren’t we always trying to improve that already perfect cheesecake or chicken roast by adding something new or using a new technique? Similarly when it comes to coffee, why stop at the same old latte? Especially when its fall and we have pumpkins galore!!

For my Indian friends who might find pumpkin pie spice a new thing, here’s the easy peasy recipe. Make a batch and store. Very soon you will find yourself using it on everything! From coffee to hot chocolate. waffles and toasts. Custards and cakes. For baking cookies and pies. And yes, even for roasting different squash! So so good.

Better than Starbucks Pumpkin spice white chocolate latte!

Just so you know, this is so good and tastes similarly to the overpriced ones you get at Starbucks, that once you make this pumpkin spice white chocolate latte you will thank me for saving you some bucks! Not to mention it takes barely 5 ingredients and 5 mins! Ok fine..7 mins if you need to be exact. Better than getting ready, standing in line and waiting for a coffee that is charged at a premium, right? Well it is in my simple world!!

So basically you take some white chocolate, pumpkin puree, milk, pumpkin pie spice and sugar and boil it all together. Simmer for 5 mins and done!! Now brew some coffee. Whisk or blend the first mixture well till frothy. Now pour the first lot into your brewed coffee and tada…  pumpkin spice white chocolate latte is ready! Serve it up with whipped cream, sprinkling of more pumpkin pie spice, some white chocolate shavings and a cinnamon stick to mix it all!! Serve hot and just cuddle.

Instructions
  1. Start by mixing together the pumpkin puree and white chocolate chips. Put them on heat in a saucepan and let everything melt. Once it melts, add the milk, sugar and pumpkin pie spice and mix thoroughly. Whisk well! Now let it simmer on low for 5 mins. Do NOT boil. After that, use a hand blender or whisk to mix it all very fast so that it becomes creamy and frothy. Now add half cup of coffee into a mug, top with half of the mixture. Add whipped cream on top if desired. If not, add a sprinkling of pumpkin pie spice and white chocolate shavings and serve! Enjoy!
For the pumpkin pie spice.
  1. Mix all the ingredients together and store in an air tight container in the fridge. Great to use in anything from waffles and french toasts to pies and cookies.
