So the other night I was having the best time of my life. I had a totally chilled Sunday what with sitting at home with P and watching angels in America marathon. God..don’t you just love Meryl Streep! I know I do. In every movie that she has done, she brings something authentic and intangible to the table,something that sets her apart and haunts you for a couple of hours if not days later. It was raining like mad, sheets of grey falling like silver rain. It was dark. It was grey. It was gloriously sexy and it made me want one thing way too badly. Not that you naughty girl! 😛 I am talking about this particular roasted red pepper and tomato soup.

As luck would happen, i had 3 red (really red, on the verge of turning purple) bell peppers in the fridge and a pack of cherry tomatoes that I had got from the Farmer’s market on Saturday along with some fresh basil. Needless to say, I knew just what I wanted for dinner.Roasted red pepper and tomato soup with grilled cheese it was! That week I had also received a beautiful care package from this awesome lifestyle brand in India called Urban Dazzle. I had long seen the beautiful Gourmet plate on their website and it had been on my mind for quite sometime. And this awesome Relish serving plate. So imagine my surprise when i got that exact bowl delivered to me along with a bunch of other really pretty crockery! Ah.. so so happy! This bowl is perfect to serve soup in, especially if you have company and want to dress up a simple soup as something a little more fancy looking. Or great to serve desserts in . I am so going to do that next. But first this roasted red pepper and tomato soup.

For as long as I can remember winters and rainy seasons have meant soups for us. BabyD loves her sweet corn chowder the most, I love anything Thai or good old chicken hot and sour, P almost always favors the simple tomato soup. I love that his tastes are so simple. Often in the rush of living, we end up forgetting why we fell for something or someone so hard, why something left an indelible impression on us while others vanished from our memory like smoke on water. Its times like these that I remember how much I fell for the simplicity that P still has. His position, his education nothing had changed this gentle stoic man. He still prefers simple good food, chooses his family over everything else and given a choice, will go for food with memories to it rather than be an adventurous gourmand trying different things. And so do I. I think that’s why we were friends first. It was one of those moments in my life when I knew that my life was about to change. From the min I met him, I knew that he and I would bond, and bond we did! Best friends to being together for over ten yrs today, life with P has been one amazing journey, studded with good food, lots of laughter , a handful of bitter arguments and a tremendous amount of love.

Just as this bowl of simple roasted red pepper and tomato soup is. Made with a tremendous amount of love. Its so simple to make that it barely feels like you made dinner. To start with you can either use a good quality of canned tomatoes (which if you are like me, you have in your pantry) or you can make your own tomato puree, either way works just as well. The canned one is obviously quicker. Start by roasting teo red peppers in the oven for about 20 mins till completely charred. While that is happening, either make the tomato puree or just chop up some garlic cloves,onion and basil for the soup. Next all that is left to do is cook the roasted red pepper pieces in onion, garlic, seasonings and chili till soft, add the tomato puree, 2 tbsp of hot and sweet tomato sauce, some stock and let it all cook for sometime. Then out comes your hand blender and get it working !! Done!! Garnish with some fresh cream, chopped basil and garlic salt, served along side some basic grilled cheese, this bowl of roasted red pepper and tomato soup is so so comforting, light yet creamy, sweet yet spicy and seriously just perfect to soak up the grilled cheese with!! You don’t really need spoon..I dunk my grilled cheese into the soup straight and eat my soup!! No spoon needed 😛 Alternately, add some baked thyme croutons to the soup just before serving. Its perfect any which way you choose to have it. Only thing that remains irrefutable is that:

  •  It is perfect for any evening when you need easy quick meal.
  •  Its rich, delicious and flavorful beyond the basic tomato soup
  •  Its a piece of home.
  • Its a simple pleasure of life that you must know!

  1. Start by preheating the oven to 200 C. Rub a little olive oil on the red peppers and keep it in the oven. Let it roast really well, till charred all over, Turn once while roasting. Bake at the top of your oven for 30 mins or until charred. Remove from oven, let it cool for sometime , take off the skin and chop it.
  2. Next, melt butter and olive oil in a deep pan, add the crushed garlic to it. After 30 secs add the chopped onion and cook till soft. Add the chopped roasted red pepper slices in with the chili flakes. Cook for two mins, then add the tomato paste, and canned tomato into it. Add the salt and pepper, a little sugar and the stock. Let it simmer for 15 mins. Do not boil the soup!
  3. After that, using a hand blender blend until the soup is smooth. Season to taste & add some basil leaves chopped finely. Gently simmer for another 15 mins until the soup is at a comfortable edible temperature.
  4. Serve by garnishing it with fresh cream (1 tbsp per bowl) and some pepper and garlic salt. Serve with hot grilled cheese! Enjoy.
Recipe Notes

You can use warm water if you dont have stock, although I strongly recommend getting stock cubes and keeping them handy for this season.
