In fact if you were to ask me, I would say that the folks who enjoy cooking love feeding just as much. Just like an artist needs a muse to inspire him a chef or a homecook needs people who enjoy the food. I consider myself really lucky that my hubby and even my daughter enjoy food so much! In fact if it weren’t for P and his love of food I wouldn’t have stepped back into the kitchen at all. That being said, cooking to me is kind of my meditation. I lose myself when I am in there. I let my nose and my eyes and ears guide me, let my palate dictate my mood and focus completely on the food at hand. Result?? Some super delicious stuff that’s loved by my friends and family.
But as you all know I love fun, fast and fabulous cooking. Dishes that dont take hours but look like they did 😛 Case in point: this incredibly delicious spaghetti with sundried tomatoes and herbed breadcrumb. We all love spaghetti in the basic tomato sauce, may be with meatballs on top. Which by the way you can make by checking out my recipe here. I am partial to the simple elegance of spaghetti with garlic mushroom. Its just the answer to my mid week dinner plights and everyone at the table polishes it off. Make a side of some salad, a slice of crusty bread and we are all sorted. This Spaghetti with sundried tomatoes and herbed breadcrumb on the other hand?? Well this one could make you grin like a kid eyeing his favorite cotton candy!
So I made this for a friend who was passing through town and called me up suddenly to say she was coming home. Reaction – yay and happy dance, followed by panic! God I dont have anything to feed her!!! As someone who cooks (alot!) people always expect to be well fed when they visit me. But it was one of those days you know, when the fridge is near empty and you are mid work and haven’t even thought of what to make for dinner. That’s when I remembered the sundried tomatoes lying in my pantry. And just like that, 20 minutes later, this beautiful platter of spaghetti with sundried tomatoes and herbed breadcrumb was ready to welcome my friend home.
As with all things spaghetti (I use only whole wheat by the way) the key is a good extra virgin olive oil and garlic, lots of it!! Atleast if you are like me. I made this super quick sauce of just roasted tomatoes and sun dried tomatoes sauteed in olive oil, garlic and cracked black pepper. This super simple spaghetti with spinach, roasted garlic, roasted ripe tomatoes and sundried tomatoes was just the thing. But to take things up a notch, the herbed breadcrumb is a great idea!! Breadcrumbs sauteed in extra virgin olive oil laden with garlic, Parmesan, parsley, basil and chili flakes. Topped with a few capers and green olives, a glass of white and red wine by the side this was a perfect meal to dig in with a friend. The parmesan and herbed breadcrumb coats the spaghetti strands beautifully, making it more filling and adding a different texture to the dish. If you want you can skip the breadcrumbs but I would strongly recommend it.

Spaghetti with sundried tomatoes and herbed breadcrumb
A simple spaghetti loaded with tomatoes, spinach and a superb herbed breadcrumb that takes this up quite a few notches. easy and quick to make.
- handful per person whole wheat spaghetti
- 4 tbsp extra virgin olive oil
- 8-10 whole garlic cloves chopped fine
- 1 tsp red chili flakes
- 2 small bunches of spinach , cleaned and whole.
- 10 cherry tomatoes halved
- 6-7 large sundried tomatoes
- 1 tbsp green olives chopped
- 5-6 capers drained
- mixed Italian herbs, salt and pepper as per taste
For the breadcrumb
- 1/2 cup breadcrumb I use American Garden for this
- 2 tbsp extra virgin olive oil
- 4-5 whole garlic chopped fine
- 1/2 cup parmesan
- 2 tsp mixed dried herbs
- 1/2 tsp red chili flakes
Start by placing a large bowl of water for boiling the spaghetti on one hob and placing a wok on other hob.
Boil the spaghetti in ample salted water as per directions.
While the pasta is boiling, get started with the veggies.
Add the olive oil to the wok,followed by the chopped garlic and red chili flakes. Saute till golden (dont burn!) .
Once done, add the halved cherry tomatoes,salt and pepper, mixed italian herbs and cook it for 5 mins till they soften and burst. Then add the spinach and sun dried tomatoes and toss together for another 2 mins till the spinach is wilted.
By this time the spaghetti must be cooked. Simply throw in the spaghetti, with about 2-3 tbsp of the reserved pasta water ( ALWAYS reserve some pasta water before draining it), and cook on high heat till the water evaporates and the sauce clings to the pasta.
Meanwhile make the breadcrumbs by simply sauteeing the breadcrumb in olive oil along with all the ingredients till toasted and fragrant. Turn off the flame and toss the parmesan through the bread crumbs.
Serve the spaghetti with the bread crumb tossed in it. Garnish with chopped green olives and caper if desired.
