It’s spread with a delicious mix of cream cheese and grated cheese, topped with some spices, sesame and nigella seeds, brushed with melted butter. You cut a slice and just marvel at it. Spiced cheesy brioche
A delicious and addictive brioche that’s filled with garlicky cheese and topped with a heady spice mix! It’s super versatile, beginner friendly and simple to make!
For the dough:
Start by activating the yeast. Heat water till it reaches lukewarm temperature or use a thermometer and check till it’s at 110F. Once it reaches that temperature add the yeast and sugar, mix and let it stand for 5-6 mins till it’s completely frothy.
In a large mixing bowl take the flour. Add the sugar to it, add oil and a little salt. Mix. Now add the activated yeast mix to it and mix it with a wooden or silicon spoon. Once this is done, start by adding a little water at a time and mixing it in. Once the flour is mixed and forms a round mass, bring it to a counter top and knead it for a good 8-10 mins.
If you are using a stand mixer continue kneading it till it’s elastic and smooth.
How to know the dough is ready: If you press your finger on it, it will leave an indent and immediately spring back. It should be smooth and pliable and soft by the time you are done kneading.
Oil the mixing bowl and place the dough in the bowl and twirl it around so the dough is oiled too.
Now cover with a kitchen towel and let it rise for 1.5-2 hours in a warm dry place. Kitchen counter works just fine unless it get too much cold draft.
For the filling:
Simply mix the ingredients in a bowl and keep it ready.
After 2 hours, bring out the dough and punch it down on the counter top.
Dust the counter with a little flour and roll out the dough into a large rectangle or circle of 1/4 inch height.
Now take a cookie cutter (I use 3.5 inch ones) and cut circles of the dough.
Lay all the cut out circles and spread filling on all of them. Spread it all the way to the edges thickly. Now simply fold every little circle into a semi circle. Simple. One fold.
Now grease a Bread baking pan with butter. Place all the semicircles one after other, fitted snuggly into the pan. The open seams should face the top. Cover with the kitchen towel and let rest for a second proofing; about 30-45 mins.
Preheat oven to 180C. Now brush the brioche with a little butter all over it. Sprinkle sesame, nigella seeds. Whatever spices you are using. I used Za’atar, pizza seasoning and chili flakes (scant tsp). Bake in the oven for 26-30 mins till it looks golden and brown like the pics. That’s it. Remove from oven and brush a little butter all over it immediately.
Let cool for 30 mins and then enjoy!
