Hello my lovelies!! How are you guys? I am so sorry I go AWOL on weekends but if you knew what I have been upto these past two days you would say I should take two days off! I am talking the mother of all cleaning, ergo Diwali cleaning for the uninitiated. And yes, I suddenly remembered this tequila lime chicken kebab with spiked sriracha mayo that was published in the Better homes and garden magazine a month back. Why of course I had to share this with you before Diwali!!

For all Indians, this is a yearly affair there is no way around. Come October and the much much awaited Diwali, every household will have the same story unfolding. For us Diwali is the most lavishly celebrated festival that we wait for the whole year. Kind of like Christmas but with many more colors and sparkling lights, fireworks galore and food, food and more food!! The evening of Diwali we worship Goddess Laxmi, the harbinger of prosperity and she, my dear friends is a stickler for cleanliness. So with the ensuing pooja on mind, everyone starts deep cleaning their house. While some prefer to outsource this cleaning to outside agencies, I am pretty old school and find a different kind of satisfaction deep cleaning my home myself. Everything is cleaned. Wardrobes and dressers, old books and utensils, piles of toys D doesn’t play with anymore. Every nook and corner, every draw and hidden corner, everything. And we end up giving away everything to the needy. The joy on their faces makes the serious elbow grease it took to clean the hoarding of one year so worth it.

So anyways, my point is not much energy is left after this super intensive cleaning. And that’s just the starting point my friends. The actual two days leading up to Diwali is mad!! I am talking unending work and fun of course. Plus we have guests arriving on Diwali evenings to celebrate with us. And that of course means more work and focus on food of course, what else!?

But you know what trying to cook a delicious meal complete with sweets, mains, drinks and even some nibbles isn’t all that fun when you have to make rangoli, light a hundred diyas, make sure the lil one is dressed well, burst crackers, meet friends and neighbors and of course dress up too! The last thing I want to do is spend time toiling over a pot of hot stuff that will make me melt in my sari! No no no! Not happening.

This is where this tequila lime chicken kebab with spiked sriracha mayo comes into play! I mean hello..who doesn’t like chicken kebab?? And you add some zing and zang from tequila and lime, well the name basically speaks for itself. This is my favorite way to adult up some plain old chicken kebabs and make them into something more appropriate for parties. And yes, that spiked sriracha mayo dip is just wow!! Don’t skip that!

The tequila lime chicken kebab with spiked sriracha mayo itself is super easy to make. All you need to do is make a basic marinade that needs pantry staples and some tequila of course, mix up the chicken in it ans let it marinate for 10-12 hours! So, if you are making this for Diwali evening, do the marination at around 8-9 am. Time of serving, bring it to room temperature, fire up that barbecue or grill and just go for it. 12-15 mins and you are done. I love finishing it up by firing up some more tequila and pouring it all over the grilled tequila lime chicken kebab with spiked sriracha mayo and letting it rest for 5 mins before serving. Needless to say you can’t serve this to the very important little adults. Please NO! Even if its cooked, tequila still is an alcohol and you cant give this to kids under 18. So, here’s what I do. Just marinate some chicken in the same marinade without tequila and voila..you have a simple malai chicken tikka ready for the kids. They love it. Its soft and juicy with hardly any spice (remove the chillies from the kiddie marinade) and gets a super yum coating of yogurt and cream.

Instructions
For the tequila lime chicken kebab
  1. Start by mixing together garlic, hung curd, cream, lime juice, cumin powder, red chilli powder, kasuri methi, tequila, oil and salt and pepper to form a thick marinade. Taste once for salt and adjust as per taste.
  2. Add chicken pieces to marinade and put this into a zip-lock pouch or an air-tight container to marinate in the fridge overnight. Don’t skip the latter.
  3. About 30 minutes prior to grilling, soak bamboo or wooden skewers in chilled water to avoid them getting burnt. Once ready to serve, heat up a grill/oven. Skewer chicken pieces, discard extra marinade, brush melted butter on pieces, add a little more salt and pepper and grill. Pieces will take about 7 to 8 minutes to grill perfectly. Turn once mid-way to ensure even grilling and baste with melted butter repeatedly.
  4. This is optional but to finish off, pour 2 tbsp tequila in a small pan, put it on flame and let the alcohol burn. Then immediately throw this on the kebabs and let them rest for 5 minutes in a tented foil.
  5. Now remove foil and serve kebabs immediately along with some char-grilled tomatoes, onion rings, lime wedges, sprinkling of chopped fresh herbs and spiked Sriracha mayonnaise.
For the spiked sriracha mayo
  1. Meanwhile, mix everything for the mayonnaise till creamy. Keep covered in refrigerator till serving time.
