  1. Pre heat oven to 180 C. Line a baking sheet with foil and lightly spray with nonstick cooking spray.
  2. Make the sauce by mixing everything together in a bowl except the carrots,sesame seeds and spring onion. Whisk and mix well.
  3. Taste and adjust as per your preference. Make sure its balanced. Now pour half of the dressing over carrots. Toss until evenly coated.
  4. Bake for 30-45 minutes depending on carrot thickness. Half way the baking time, drizzle the remaining dressing over the carrots and stir them a little. Remove when fork tender, took me 35 mins. Serve garnished with spring onions and sesame seeds sprinkled on top.
  5. I also roasted some onions along with the carrots and served this with harissa roasted chickpeas to turn this into a veggie power packed lunch!
