Whiskey and honey roasted carrots are the perfect side dish! Think about a Thanksgiving, Easter or Christmas meal. This would be devoured in minutes!! I served it up with some harissa roasted chickpeas and onions for a complete healthy meatless lunch.
Fall is such a beautiful time of the year. Its in the dappled afternoon sunlight feeling like warmed honey on your skin, the nip in the air as you go for your post dinner walks. Its in the early hint of fog that starts to cover ground making everything seem just mystical. Its in the fresh fruits and vegetables that flood the market and the flowers blooming everywhere!! Oh what a glorious time fall is!
Not just are we close to Diwali and Halloween but also Thanksgiving and Christmas is around the corner!! Another reason to love fall and winter, right?? I am so excited for this season and this whiskey and honey roasted carrot is probably one of the nest ways to get ready for the big party menu!
These whiskey and honey roasted carrots are my favorite way to enjoy carrots.
But when you glaze them in this simple sauce and serve them with harissa roasted chickpeas, lets just face it, it becomes kind of irresistible. Not only is it simple to make,I am talking a mere 10 minutes to whip these up and then just pop them in the oven. No pan roasting, no extra utensils.Nothing. Just one pan, a spoon and a baking dish!
When we are talking Christmas and Thanksgiving, side dishes are the key. My perfect menu usually includes a roasted chicken, creamy baked mashed potatoes, garlic lime honey roasted potatoes, penne alla vodka, egg masala stir fry and these super awesome whiskey and honey roasted carrots. Think how lovely your table will look laden with these beautiful dishes!! Finish that with some of this beautiful and super healthy (no sugar guys!) tapioca pudding with honey caramelised pineapples and finally..this pumpkin spice latte with white chocolate which is basically fall in a mug!
For this whiskey and honey roasted carrots, all you need to do is mix a few basic pantry ingredients, pour it all over the carrots and put them in the oven for 20-45 mins depending on what size your carrots are. That’s it. Could things get any simpler? I think not.
So recently I became Jamie Oliver’s Food Revolution Ambassador. The reason I am so happy about it (well, apart from being a part of Jamie’s team of course) is coz at the basic level, this revolution is exactly what i am all about. I am not a strict parent but I abhor junk food. I am not fussy or a health freak but I can’t stand people ordering in as its the easy way out. I am all for everyone is free to their own food choices, but I also believe that sometimes we have to hand hold those who aren’t aware of the correct choices. In my opinion, everyone should know the basics of cooking and should be armed with the knowledge of how to cook a simple meal for himself. Eating out and ordering in are the biggest reasons for obesity and health problems. And we need to start a food revolution to make sure our kids dont follow the bad steps. Easiest way to do that? Cook with your child or spouse and make kitchen the true heart of your home!! It sure as hell is ours.
This is a dish that your child or your spouse(who, if he’s like most men , hates coming into the kitchen) can whip up while you take care of the more serious food (hint: Turkey or chicken roast!). My husband loves making this coz well..whiskey! Hello!! 😛 But apart from that, he just loves how completely easy and quick this is. Just a quick splashes and mixing, a bit of tasting and adjustment and done! It’s a kids play. But hey, don’t let the guests think that!! Coz this simple whiskey and honey roasted carrots pack a serious punch of flavors coming from a fusion on ingredients! I am talking flavor kaboom!!
The pungency of mustard and the sweetness of honey are the perfect foil to the otherwise usual lime juice and garlic combination. Add a splash of some good whiskey, a bit of soy sauce, flavorings like fennel seeds and yellow mustard seeds and that’s it. The flavor profile to take this simplest of roasts to another level. Thrown in some crunchy harissa roasted chickpeas, a bit of roasted onions as well and you have a great vegetarian dish in your hands.
This would be a great start off point to involve your family and help them get acquainted with food and basic cooking techniques. As much as education is important, so is educating your kids about correct food choices and teaching them the basics. So go on, join the food revolution and lets get cooking!

- 7 carrots fresh
- juice of 2 lemon
- 2 tbsp organic honey
- 1/4 cup whiskey
- 1 tbsp soy sauce
- 5 cloves of garlic chopped or minced
- 2 tbsp olive oil
- 1 tsp Dijon mustard
- 1/2 tsp yellow mustard seeds
- 1 tsp fennel seeds
- 1/2 tsp white and black sesame seeds
- salt and pepper acc to taste
- 1 tbsp spring onions chopped to garnish
- 1 tsp chopped green chillie , sub with red chili flakes as per desire.

- Pre heat oven to 180 C. Line a baking sheet with foil and lightly spray with nonstick cooking spray.
- Make the sauce by mixing everything together in a bowl except the carrots,sesame seeds and spring onion. Whisk and mix well.
- Taste and adjust as per your preference. Make sure its balanced. Now pour half of the dressing over carrots. Toss until evenly coated.
- Bake for 30-45 minutes depending on carrot thickness. Half way the baking time, drizzle the remaining dressing over the carrots and stir them a little. Remove when fork tender, took me 35 mins. Serve garnished with spring onions and sesame seeds sprinkled on top.
- I also roasted some onions along with the carrots and served this with harissa roasted chickpeas to turn this into a veggie power packed lunch!
They sound absolutely amazing, the perfect accompaniment to so many other dishes. Delicious.

My kids eat way too much crap but I find the easiest way to get them to try new things is to get them in the kitchen with me. Peeling carrots is easy and gets them in touch with their food. Love this!!
