I am starting a healthier life style and I want you to be a part of it too. Over the years, somewhere between work and managing home, cooking and blogging about food I lost my former self, physically. I started feeling tired quickly, I hated to even walk 500 metres and simply had no physical activity during the day. Our current work environment is such that it doesn’t allow a lot of physical activities. Days are spent in front of a laptop or attending con calls with the clients. Even when you get home, its already late and you have a million things to do at home, so much so in fact that you feel like taking 15 mins for yourself to sip a cup of coffee in pace as a luxury. So then who had the time to exercise?? Doesn’t that take a lot of time?? It does! But you know what, I got a wake up call when I started feeling really tired and down. It isn’t like me at all and I realised much of the lethargy I was feeling came from my lifestyle. Motivation : My daughter D who loves it when I play with her or walk with her as she rides her bike all around our beautiful campus. 
So, I am finally on the exercise wagon, religiously doing my Surya Namaskars and running on the treadmill at home. But that isn’t enough if you don’t match it with healthy food.

Hence this series of healthy recipes you will see on the blog from now on. In fact, I have a separate category called healthy living and 30 minute meals under the Food Menu. As Indians pickles or achaar go hand in hand with so many of our meals. I will confess, I am addicted to the homemade hing sarson wali aam ka achaar my mom in law sends me. But you know what? Those pickles that you probably have with every paratha or subji are actually silent killers! Loaded with masala, swimming in oil and sitting in a vat of salt, those pickles/achaar are a coronary arrest waiting to happen.

As an alternative to the achaar/ pickles, I made these extremely delicious and low fat zucchini chive pickles. No wonder, especially since you can find zucchini everywhere right now! Wherever you look, the vegetable markets are teeming with yellow and green zucchini. Whats a better way to save some for future than turning it into delicious pickles!?  As great as zucchini are as  simple roasted side dishes, tossed into padthai or noodles, turned into lasagna, I wanted to try something a little different and so I went searching for some ideas and stumbled upon a recipe for zucchini pickles on Pinterest. This was just perfect since it called for a recipe of refrigerator pickles which means they are quick, easy and incredibly tasty.

These zucchini chive pickles are my take on a healthier version of pickled vegetables that taste just as good.

Crunchy, tangy, sweet with a subtle hint of heat from the jalapeno` and red chili flakes, these pickles are great with burgers, sandwiches and even as a quick topping on cold sesame noodles!

Instructions
  1. Start by slicing the zucchini really thin . Mix the salt in the iced water and mix till the salt dissolves. Add the zucchini into the iced water and keep it covered for 2 hours. (Put a heavy dish on top to make sure the zucchini remains submerged in the water) This helps keep the vegetable crisp. After 2 hours, drain it well and dry it on kitchen towels.
  2. In the meanwhile, make the pickling solution. Boil the vinegar, water, sugar, mustard seeds,turmeric. Simmer for 7-8 mins till the sugar has dissolved completely. Turn off the heat and add the remaining ingredients. Allow the solution to cool completely before adding the zucchini.
  3. Make sure you have sterilized a glass jar (clean it with hot water and dry it completely). Add the zucchini and onion into the jar. Pour the cooled pickling solution into the jar. Screw the lid on and let it rest in the fridge overnight. Stays well for upto 1 month.

  1. What a great idea to pickle squash and zucchini! I love pickling anything and everything… beets, corn, cucumbers, onions and now zucchini! I have a ton of squash to use from my garden and this sounds like a wonderful recipe to try!

  2. Since I have gotten older, I have noticed that I love pickled items more and more. That tang is a necessary part of any meal for me. Whether it be a hot sauce or pickled vegetable, it always makes the meal better. And even eating healthier, it is hard to get those rich flavors without all the fat and sugar. Pickles are a great way to get those! I love that you are on a journey to make yourself healthier. I seem to go forward a few steps and then regress. Luckily it’s not back to my start so I am still making progress no matter how small. Just have to remember it is a journey and a lifestyle not a quick fix. Love you!!

    1. Same here J..I take steps and usually go back to my old routine soon. This time its different though. Trying my best to stick to it. And so true about pickles! Its definitely not a quick fix and we both will get there.. Love you right back! <3
