Fudgy chocolate brownies three ways

Delicious fudgy chocolate brownies wuth perfect crackle topped with three different toppings! Just 150 calories each and made in a single bowl!!

Ingredients

  • 1/2 cup unsalted butter melted
  • 2 eggs
  • 1/2 cup dark cocoa powder I use Hershey
  • 1/2 cup flour
  • 1 cup + 2 tbsp sugar , i use castor sugar
  • 2 tsp vanilla essence
  • pinch of salt
  • 1 tbsp oil
  • 1/2 cup chocolate chunks

Instructions

  1. Start by mixing melted butter and oil together. Add the sugar and whip till fluffy . Once that is done, add the two eggs, vanilla essence and whip till light in color. I usually whip the eggs for almost 3-4 minutes. this is essential as it gives the brownies that typical crackled top. Dont skip this!


  2. Next, add the flour and cocoa powder (sifted) and the salt. Simply fold it in. Add the chocolate chunks and fold it in too. Don't whip this or over beat it. It just needs to be mixed well. 

    Pour the batter into a prepared tin . 

  3. Lightly grease an 8-inch square baking pan with cooking oil spray and line with parchment paper. I usually have some paper overflowing on both sides so that its easier to lift it out when the brownies are baked. 

  4. Now pour the batter into the prepared tin. Put it into an oven pre-heated at 175 C or 350F and bake for 23 -25 mins till the batter is just set to touch. Since its a fudgy brownie, the toothpick test comes out as dirty, not clean. 

  5. Remove the brownie from the pan after 10 mins by lifting the edges of the paper. Let it cool on a wire rack, then cut into 16 small squares or 9 large ones. 

    Store in an airtight container. 

Toppings:

  1. For the Oreo topping: 

    When you have poured the batter into pan, break the oreo into pieces as desired and simply lay them on the top of the batter in a layer. Proceed to bake as mentioned above. 

For the peanut butter cookie dough topping:

  1. When you have poured the batter into pan, lay small dollops of the cookie dough on the batter in a single line. I use a small measuring spoon to make the scoops of a similar size. The recipe of the peanut butter cookie dough is here. Just omit the shaping and adding the kisses in the recipe. Basically make the dough, chill and make scoops to lay on the brownie -  RECIPE. 

Brownie Pizza

  1. Here, I baked the brownie as usual. Once its cooled down, I lay on different topping son my choice. Starting from top left : 

    1. Nutella with sprinkles

    2. Fresh strawberries (use raspberry/blueberry)

    3. Dark chocolate chunks with chocolate sauce drizzle

    4. M&ms or Gems chocolate

    5. Strawberry sorbet / icecream of choice

    6. Chocolate chip cookie on top 

    7. Fresh berries

    8. Whipped cream cheese with salted caramel sauce

    9. Nutella with strawberries.

Recipe Notes

Whisking the egg for a long time is essential as it creates the crackled top 

Dont overbeat the batter after adding the flour and cocoa. If you do, the texture will be cake like. 

Dont overbake if you want the brownies to be fudgy. 

Use granulated sugar if you cant get castor sugar but be sure to mix butter and sugar really well. 

Adjust sweetness as per taste.
