PUMPKIN TIKKI WITH SAMBAL OELEK for Diwali

Officially fall is here and what better way to celebrate than these delicious and tempting pumpkin tikka. Give those aloo tikkis a break this festive season. Instead channel the inner domestic goddess in you and treat your guests to these innovative pumpkin tikkis with sambal oelek. Bonus: Super easy and quick too!

Ingredients

  • 1/2 cup grated pumpkin
  • 1 medium boiled potato mashed
  • 1/4 cup chickpea flour
  • 1 tbsp ginger crushed
  • 2 tbsp garlic minced
  • 2 whole green chillies deseeded and chopped
  • 1/2 tsp cumin seeds
  • 1/2 tsp fennel seeds
  • 1/2 tbsp roasted cumin powder
  • 1/2 tbsp Kashmiri red chili powder
  • 1 tbsp dried mango powder
  • 1/2 tsp garam masala powder
  • 1 tbsp sambal oelek paste, sub with sweet chili sauce of preference if you need a 100% vegetarian option
  • 2 tbsp vegetable/olive oil for pan frying

For the stuffing:

  • 2 tbsp almonds, cashew, peanut all chopped fine.
  • 1 tbsp raisins
  • mozzarella cheese shredded
  • extra chickpea flour for rolling the tikkis

Instructions

  1. Heat 2 tbsp oil in a non stick pan. Add the crushed ginger, garlic and chili for a minute.

    Now add the chickpea flour and roast the flour till it reaches its trademark nutty aroma and golden brown color.

    Now add the grated pumpkin and mashed boiled potato. Saute for another 2 -3 minutes.

    Add all the masala and the sambal oelek paste, add a splash of water and keep cooking for another 5 minutes.

    Remove from heat, taste for seasoning and let it cool slightly.

    Chop the dry fruits really tiny for stuffing and grate the mozzarella.

    In a separate plate take some chickpea flour.

    Now take a ping pong ball sized mixture, slightly flatten it in the centre, add the mozzarella and the dry fruits, close the dough well making sure its sealed completely. Repeat with all others.

    Now, roll each tikki in the extra chickpea flour.

    Heat a non stick tawa with oil. Carefully place the tikkis on the tawa and cook till cooked.

    Keep the flame on low and cook for 4-5 mins per side till golden and done.

    Remove and serve immediately with pickled onions, mint chutney and more sambal oelek + sweet chili sauce dip or even sriracha mayonnaise.
