A delicious and easy to make cake which uses honey and treacle syrup instead of sugar.
Start by mixing all the dry ingredients ; sifted flour, baking powder, ginger, cinnamon in a bowl.
Add the orange zest and mix it to the flour.
Brown the butter. Place cold cubes of butter in a pan and let it brown on medium heat till it changes color and turns brownish. It gets foamy on top and a distinct nutty aroma is emated. Let it cool while you make the dry ingredient mix.
Once the butter has cooled down, pour it into a large mixing bowl. Add the remaining wet ingredients; orange juice, milk,honey,treacle syrup and slightly beaten eggs. Add the vanilla and mix on medium speed till smooth.
Now add the dry mixture to this wet mix and continue to mix till a cake batter is formed. Dont forget to scrape the sides of the bowl.
At this point if you wish to you can add additional ingredients like raisins, chopped nuts of choice etc.
In the meanwhile make sure you have preheated the oven to 165C. Now divide the batter into the cake pans (line them with parchment) making sure they are only half filled. Place the pans in the oven and bake for 50-55 mins, less if you are using the mini pans. Around 25 mins into baking cover the pans with foil and continue baking. Check the smaller one at 45 mins mark and take it out accordingly.
Let cool for 10-15 mins before you take it out of the pans.
Enjoy as it is with a cup of coffee or tea. If you have kids at home or a sweet tooth, you can make a simple glaze to pour over the cake by mixing some icing sugar with orange juice. Pour it all over the cake. Enjoy!!
