Garlic lime honey roasted potatoes are the perfect side dish you can whip up on a short notice. Taking only 10 minutes to get these ready, these roasted potatoes are extremely versatile. Crispy in the top, soft within and flavored with garlic,lime honey, hint of chili, they make great sides for celebratory occasions and 4th of July too!
Often in life its the simple things that make us pause, stop and feel. I have the strangest feeling these days. Sometimes I get up at night thinking about it, other times I imagine it even while working. Its become kind of an obsession. You guessed it right! I am talking about food. Good God, who knew being a blogger was going to turn you into one food machine? My mornings start with thoughts of what meals I will be making that day, I imagine recreating my favorites from Pinterest during boring work and I spend my time testing recipes whenever I get sometime, which isn’t as often as I would like.
Finally the scorching sun has given way to a gentler, cooler Mr. Sun and I doubt there is anyone happier than me. Don’t get me wrong, I am still gorging on my no churn paan icecream and chai kulfi/popsicle, but now , occasionally at nights, I am slowly getting enticed by the idea of hot, rich and even fried food! Reason: well its rainy and cloudy, dull and grey and I like doing what I can to cheery myself up. I mean, you have to think of you own happiness you know, you owe that to yourself.
With that though in mind, I sauntered off to the kitchen in the hopes of making something quick and delicious. As you know by now, I have a predilection for easy and fast 30 minute meals, which work especially well for weeknight dinners and for working folks who don’t have a lot of time. These garlic lime honey roasted potatoes are just that. They take an active ten minutes to whip up, after that simply put them in the oven and go do your thing for an hour. I usually spend that time whipping up an easy 20 minute mushroom spaghetti or even pasta alla vodka if I am feeling a bit more indulgent. A quick and simple fresh salad, and after helping babyD with her homework, I just check on my potatoes, and voila`!! Garlic lime honey roasted potatoes are ready!!
I feel they are great for entertaining or for when you have guests over coz hello.. look how pretty!! These garlic lime honey roasted potatoes can also be called as hassleback potatoes. Some even call them as accordion potatoes coz of the way they fan out. See?? So so pretty! You can serve them up in so many ways. Just as they are, may be with some sweet Thai chili sauce. Load them up with cheese, or even cheddar and bacon!! I love to top it with some tzatziki dip too and a dash of Thai sweet chili sauce. The tzatziki dip is perfect counter to the crisp roasted potatoes. Its light, its refreshing and its very much what these flavorful garlic lime honey roasted potatoes need. Give it a go soon.
Again, versatile coz you can use any kind of potatoes here. Yukon Gold is what I use. But fingerlings, baby potatoes all work well. Just be sure that its a waxy potato. With the 4th of July celebration plannings going on, I know you must want a potato side side on your table. This is perfect!! Although, you can try my twice baked mashed potatoes with peas too. That was sublime. I am going to be serving these potatoes, grilled corn on the cob (Indian style), my malai chicken sliders, beer battered onion rings, summer fruit tart and these strawberry cream mimosa at my soiree. - Yukon Gold potatoes ( any waxy ones)- 6 or as desired.
- For the spice rub:
- Garlic cloves chopped fine - 8
- Green chillie chopped fine - 2
- Juice of 1 lime
- Extra virgin olive oil - ¼ cup
- Butter, softened - 1 tbsp
- Sea salt - as needed
- Black pepper
- Red chili flakes -as desired
- Dried rosemary - just a pinch.
- Cilantro/ coriander/parsley- a big handful, chopped fine.
- Thai sweet chili sauce
- Tzatziki dip - recipe link given above.
- Start by scrubbing the potatoes clean and drying them off on tissues.
- Hold the potato firmly and start slicing the potato lengthwise into thin slices, keeping the bottom intact. Essentially the knife shouldnt cut all the through the potato.
- Mix all the ingredients needed for the mix (except rosemary and cilantro) thoroughly.
- Use a pastry brush and apply it all over the potatoes, making sure to get enough into the crevices too.
- Preheat the oven at 180C.
- sprinkle the rosemary and cilantro on top of the potatoes arranged on a baking sheet.
- Place it in the oven to roast for 60 minutes or till fork tender inside and crispy outside.
- Serve immediately with the condiments.
Use less garlic if you wish, but I would strongly suggest following the recipe for best results.
Dont be stingy with salt and pepper.
If using cheese, put some grated cheddar cheese into the slices and bake in the last ten minutes till the cheese had melted. Serve hot, loaded with browned bacon and mushroom bits.
Dollop of tzatziki dip and some thai sweet chili sauce if desired.
